- It is best to buy bunches of sweet potato leaves with intact leaves, firm leaves that are not wilted, and a color that is not too dark or too light.
- Avoid buying bunches with dark green leaves that have flowers, as these are old sweet potato leaves and not tasty. Check carefully to avoid buying bunches that are infested or wilted.
How to make Vegetarian Sweet Potato Leaf Soup

Prepare the sweet potato leaves
After purchasing, remove the leaves from the sweet potato and wash them in a basin with water twice. During the second wash, gently squeeze the leaves to soften them, then drain the leaves in a basket to dry.

Cook vegetarian bitter melon soup
Add 500ml of water and 1/2 teaspoon of salt, 1.5 tablespoons of vegetarian seasoning, 1/3 teaspoon of monosodium glutamate into the pot. Place the pot on the stove, turn on high heat, stir to dissolve the seasoning and bring to a boil.
Next, add the bitter melon, stir well and reduce to medium heat. When the water boils again, adjust the seasoning to taste, cook for about 3 – 5 minutes until the bitter melon is tender, then turn off the heat to finish.
Tip: To prevent the bitter melon from becoming mushy and to evenly absorb the seasoning, it’s best to season before adding the vegetable, and then season again one last time before turning off the heat. -
