Ingredients for Sweet Potato Stem Soup Serves 3 people

Sweet potato stem 1 bunch (400gr) Pork belly 100 gr Fried tofu 4 pieces Vietnamese perilla 8 leaves Cilantro 3 sprigs Green onions 3 sprigs Sour tamarind 2 tablespoons Common seasonings a little (Salt/ seasoning powder/ monosodium glutamate)

  • You should choose firm sweet potato shoots with buds extending from the base because these are still young vines, which will taste better. Additionally, you should buy sweet potato shoots with large buds rather than small ones.
  • Avoid choosing sweet potato shoots that are bruised, with darkened skin, or soft and mushy stems, as they may be spoiled or have been stored for too long, which will not ensure quality when consumed.

How to choose the right pork belly

  • You should choose pieces of pork belly that are light red or bright pink, with a shiny white fat layer. The meat should be elastic and feel quite firm when touched.
  • In addition, you should choose pork belly that has an equal ratio of meat to fat, and these two parts must be tightly connected, not separated, especially with a distinctive fragrant smell.
  • Avoid choosing pork belly that has a pale or purple color. When you gently press the meat, it will leave an indentation, has an unusual fishy odor, and is slimy, as this indicates that the meat has gone bad.

How to prepare Sweet Potato Shoot Soup

  • Prepare the ingredients

    Shiso leaves and green onions should be washed clean and then chopped finely using a knife. Cilantro should have the roots trimmed off, washed with clean water, and then cut into small pieces about the length of a finger.

    Sweet potato shoots should have their outer skin peeled off. To remove all the sap (latex) from the sweet potato shoots, soak them in a diluted saltwater mixture with 1 tablespoon of sour fermented rice.

    Next, boil about 300ml of filtered water, then add the sweet potato shoots to the pot, blanch for about 3 minutes, then remove, squeeze out the water, and let them drain.

    Buy pork belly and rub it with a little salt, then rinse it with clean water, and boil it in 500ml of water for about 15 minutes over high heat.

    After the meat is cooked, remove it to cool, then cut it into thin slices suitable for eating, keeping the broth to cook the soup.

    Fried tofu should be soaked in warm water for about 15 minutes, then removed and cut into small square pieces suitable for eating.

    You bring back to a boil the pot of water used to boil the meat earlier over high heat, when the water boils, add 1 tablespoon of salt, 1 tablespoon of seasoning, 1 teaspoon of monosodium glutamate, the briefly boiled sweet potato shoots, the pork belly, and the fried tofu.

    Cook for about 5 – 7 minutes, then add 1 tablespoon of sour fermented rice to the pot, adjust the seasoning to your family’s taste, then sprinkle the chopped perilla leaves, green onions, and coriander on top and turn off the stove.
