Tofu 200 gr Tomatoes 3 pieces Pineapple 30 gr Various beans 300 gr (long beans/okra/snap beans) Herbs 20 gr (Vietnamese coriander) Kumquat 3 pieces Chili 2 pieces Seasoning 20 gr (sugar/vegetarian seasoning/fish sauce) Cooking oil 10 ml

  • Choose fruits without dark spots, not bruised, and the skin should not be wrinkled.
  • Press lightly to see if the inside is still firm. You should choose pink tomatoes because they have dense flesh, fewer seeds, and are rich in vitamins.

How to choose good tofu

  • A good piece of tofu always has an off-white color; if it has a yellowish color, it contains gypsum. The yellower the tofu, the more gypsum it contains.
  • The piece of tofu should feel light and soft when held. If it feels heavy, firm, or somewhat hard, and is too square, you should skip it.
  • Buyers should also pay attention to the smell of the tofu. Real, pure tofu has its own distinctive aroma, while tofu containing gypsum either has no smell or faintly smells of lime.

  • Prepare the ingredients

    Wash the tofu, let it dry, then cut it into bite-sized pieces and fry until golden brown on the outside.

    Prepare the other ingredients as follows:

    • Peel the pineapple and cut it into bite-sized pieces.
    • Cut the okra and snake beans into bite-sized pieces.
    • Wash the tomatoes and cut them into bite-sized pieces.
    • Squeeze the calamondin to extract the juice.
    • Wash the herbs and chop them finely.

  • Cook the soup

    Add 100 ml of water to a pot and heat it on the stove. Then add 1 teaspoon of salt to help the vegetables stay greener.

    When the soup water boils, add the snake beans to the pot along with the cut pineapple and cook together.

    Once the soup water boils again, add the fried tofu into the pot. Then gradually add the okra, snake beans, and tomatoes to cook together. When the soup boils, season it to taste and turn off the heat, adding the calamondin juice.
