  • Good ribs usually have flat and small bones because they have less bone and more meat.
  • Do not choose ribs that are discolored, lack elasticity, have an unpleasant smell, and are slimy.

  • You can use your hand to feel the surface of the eggshell; if the surface is rough and slightly coarse, it is fresh, while a smooth surface indicates the egg has been stored for a while.

How to make Braised Pork Ribs with Quail Eggs

  • Prepare the ingredients

    To clean the ribs and eliminate odors, soak the ribs in diluted salt water for about 10 minutes, then rinse with clean water several times and let them drain.

    Wash the quail eggs and place them in a basket to drain.

    Mix well to combine the seasonings and coat the ribs evenly. Use plastic wrap to cover tightly and marinate the ribs for about 30 minutes in the refrigerator to allow the meat to absorb the flavors.

  • Boiled Quail Eggs

    Put the quail eggs in a pot, fill with water to cover the eggs, add 1 teaspoon of salt, and boil for about 5 – 7 minutes until the eggs are cooked.

    After the eggs are boiled, turn off the heat, remove the eggs, and carefully peel off the shells, avoiding breaking the eggs.

    Rinse them again briefly to remove any remaining shell fragments, leaving the eggs clean.

    • Method 3: After boiling the eggs, add 1 teaspoon of vinegar to the pot and stir well for a few minutes; this will make peeling the boiled eggs very easy. You can also add vinegar while boiling, just remember to stir well.

    You place a pot on the stove over high heat and heat 2 tablespoons of cooking oil. When the oil is hot, add 2 tablespoons of sugar, reduce the heat, and cook until the sugar turns a golden brown color (caramel color), then add the marinated pork ribs, stir quickly to coat the meat evenly with the caramel and sear for about 5 minutes.

    When the caramel has evenly coated the ribs and the meat is seared, add 1 cup of filtered water (about 200ml) to the pot, stir gently to dissolve the seasonings, cover, and cook for about 10 minutes until it boils, then add the peeled quail eggs to the pot.

    Cover and reduce to medium heat, braise for another 10 minutes, then add 1 tablespoon of fish sauce, 1 teaspoon of seasoning powder, and 1 chopped chili. Cook for another 5 minutes until the braising liquid reduces and the meat and eggs are evenly colored, then taste and adjust the seasoning as needed before turning off the heat. Serve the dish, sprinkle some chopped cilantro on top, and enjoy!
