  • Avoid purchasing pieces of tofu that are too yellow, feel dry and hard, have a spongy texture, taste bland, and have a faint smell of lime; these are tofu containing gypsum that is not good for health.

How to Make Tomato Egg Tofu Soup

  • Prepare the ingredients

    Tomatoes bought should have the stems removed, washed clean, and then cut into wedges.

    White tofu is rinsed briefly with water, then cut into small square pieces suitable for eating.

    Crack the egg into a bowl and use chopsticks to beat the egg evenly.

    Remove the stems from the chili and wash it clean. Green onions and coriander should have the roots trimmed and any damaged leaves discarded, then washed with water and drained, and cut the green onions into two parts, with the onion tops going into a mortar with the chili to be mashed, while the green onion leaves are cut finely with the knife along with the coriander.

  • Cooking the Soup

    Place a pot on the stove, add 1 tablespoon of cooking oil to the pot and heat over medium flame. Wait for the oil to heat up, then add minced onion and chili to sauté until fragrant, followed by adding tomatoes to stir-fry until cooked.

    Once the tomatoes are cooked, fairly soft, and aromatic, add 500 ml of water to the pot, boil over high heat until the water boils, then season the pot with the following mixture of spices: 1 tablespoon of seasoning powder, 1 teaspoon of sugar, 2 tablespoons of fish sauce, 1/2 teaspoon of monosodium glutamate, and stir well to dissolve the spices completely.

    Next, add the eggs to the pot. To make the eggs blend evenly in the soup and look more appealing, add the eggs while gently stirring in a circular motion in one fixed direction. Then, add the tofu, let it boil once more, and adjust the seasoning to taste. Finally, add finely chopped green onions and cilantro, and turn off the stove.
