  • You should choose fresh pork pieces that have bright colors, light pink or light red, with fat about 1.5 – 2 fingers thick, slightly translucent white with a creamy hue, a dry surface, and soft skin indicating fresh meat.
  • To choose good meat, you need to select pork that has the characteristic aroma of meat, not unpleasant, with no fishy smell, good elasticity, and no indentations on the surface.
  • When buying meat, touch it with your hand to feel the meat fibers are firm, not too hard nor mushy, and no slimy liquid means it is good meat.
  • Avoid buying meat that has unusual colors, pale, or too dark. If the meat surface is shiny and feels slightly slimy when touched, it is not fresh.

  • You should choose ripe tomatoes with bright red skin, evenly colored, firm, and not scratched or bruised, as these are fresh and delicious tomatoes.
  • You should select tomatoes with green stems that are firmly attached to the fruit. Avoid choosing tomatoes that have dropped their stems or have yellowing stems, or unevenly colored fruits. This indicates that the tomatoes were harvested a long time ago or picked when they were not ripe.
  • Fresh, ripe tomatoes will have a mild fragrant smell. When cutting a tomato in half, the seeds inside should be yellow, not green, and the flesh should be red. Avoid mistakenly buying overripe tomatoes.

How to make Minced Meat Tomato Soup

  • Prepare the ingredients

    Wash the pork with a little diluted salt water, then rinse with clean water, drain, and chop finely with a knife.

    Tips to eliminate the smell of pork:
    • Method 1: Blanch the meat in boiling water for about 2 – 3 minutes, then rinse with clean water for effective odor removal.
    • Method 2: Soak the meat in diluted salt water for 10 – 15 minutes. After the time is up, take the meat out and rinse it clean with water.
    • Method 3: Use ingredients to eliminate odors such as shallots/white wine/vinegar/ginger/lemon grass/or straw to completely remove the natural unpleasant smell of pork.

    Chives remove roots and wilted leaves, rinse briefly with water, then chop finely. Purple onions, peel and chop finely. Tomatoes wash clean 2 – 3 times with water to drain, then cut into wedges.

    Add the minced pork to a bowl, marinate with 1/2 of the chopped chives along with 1 teaspoon of seasoning powder, 1/2 teaspoon of ground pepper, and let it sit for about 10 minutes for the meat to absorb the seasoning.

  • Cook the soup

    Add 1 tablespoon of cooking oil into the pot and turn on medium heat. Wait for the oil to heat up, then add the marinated meat and stir-fry for about 2 minutes until the meat is firm. Next, add 300ml of filtered water into the pot and turn on high heat to boil the water.

    When the water boils, add the tomatoes into the pot and cook for another 3 – 5 minutes, then season the pot with 1 tablespoon of salt, 1 teaspoon of seasoning powder, and 1 teaspoon of ground pepper.

    Continue to cook for about 3 more minutes and adjust the seasoning to suit your family’s taste, then turn off the heat and serve the soup in a bowl.
