How to choose fresh pork

  • You should observe the color of the meat piece; fresh meat will have a light pink or light red color, the fibers of the meat will slightly tighten when cut, the surface should be dry, and the skin should be soft.
  • Choose pieces of meat that have a characteristic aroma, with no fishy smell. When you gently press with your hand, you should feel the elasticity and it should return to its original shape when you withdraw your hand; the meat should not be indented.
  • You should not choose pieces of meat that have an unusual foul smell, pale or dark color, or are slimy as this may indicate that the meat has been stored for too long.
