How to choose fresh ingredients
How to choose fresh shrimp
- You should choose shrimp that have a transparent outer shell and smell of seawater, not a fishy smell.
- Fresh shrimp will have a curled tail, a slightly bent body, firm flesh but not unusually plump, and the shell joints are intact, with the head and body of the shrimp tightly connected.
- Avoid buying shrimp with spread tails as they have been injected with chemicals or water to make them plump.
- It’s best to buy fresh shrimp from seafood shops or reputable supermarkets for safety in usage.

How to make Malabar spinach soup with shrimp
-
Prepare the shrimp
Wash the shrimp thoroughly, peel the shell, remove the shrimp’s intestines, and eliminate the odor by soaking the shrimp in diluted salt water for 2 – 3 minutes, then rinse with clean water and let drain.
How to clean the shrimp intestines quickly and easily
- Method 1: Use the tip of a knife to make a longitudinal cut along the shrimp’s back without cutting it off, then pull out the shrimp’s intestines.
- Method 2: Count from the head of the shrimp to the second segment, use a toothpick or a sharp stick to pierce it, and then pull to remove the shrimp’s intestines.
Chop or mince the green onions, 4 shallots, and 1 clove of garlic.
After cleaning the shrimp, put them in the blender and grind them together with 1/2 of the chopped onions, garlic, 3 tablespoons of fish sauce, 1 tablespoon of seasoning powder, 1/4 teaspoon of sugar, 1/4 teaspoon of salt, and 1/2 teaspoon of pepper.

Prepare Malabar spinach
Pick the young leaves and tender tips of the Malabar spinach, wash them clean, and then chop them finely. After that, you can crush the Malabar spinach leaves to make the soup more viscous and the broth sweeter.
Tip: If you do not like the soup to be too viscous, just wash it clean without crushing. -
Sauté shrimp
Place a pot on the stove, add 3 tablespoons of cooking oil, and heat it. Then sauté half of the chopped onion and garlic until fragrant.
When the onion and garlic start to turn golden and fragrant, add the minced shrimp, and stir-fry until the shrimp turns color and releases its aroma.

Cooking the soup
Pour 1 liter of water (about 1 full bowl) into the pot with the shrimp and bring it to a boil.
When the water boils, add the jute leaves and cook for 2 – 3 minutes until the water boils again and the leaves are cooked. Adjust the seasoning to taste, then turn off the heat and serve in a bowl.
