How to choose fresh shrimp
- When choosing shrimp, you should select fresh shrimp with a clear shell that still has a slight smell of seawater, not a fishy smell.
- Choose those with tails curled together, flexible joints on the shell, and the head and body firmly attached to each other.
- Do not choose those with slimy bodies, legs turning black, unusually plump, and do not buy shrimp with dark patches or uneven colors.
How to choose fresh, delicious tomatoes
- When choosing tomatoes, select those with stems still attached, small elongated shapes rather than perfectly round ones; these are Vietnamese tomatoes.
- You should buy from reputable vendors, stores, and large supermarket chains to avoid low-quality, unsafe food.
- Avoid selecting overly large tomatoes, those with deep colors, imperfections, bruises, or those without stems.
How to choose fresh pineapples
- You should choose fruits with bright yellow color from the stem to the bottom, select round, plump fruits as they will have more flesh.
- Choose fruits that are not too hard or too soft; when pressed, they should not feel indented.
- Avoid selecting overly soft fruits that smell fermented, those with green stems or darkened areas.

Prepare the shrimp
After buying shrimp, wash them thoroughly and peel off the shells. When peeling the head, be careful with scissors to keep the shrimp roe intact.
After peeling, put them in a mortar to pound, or use a blender for quicker processing.
Tip for easy shrimp peeling:
- Take a fork and poke it into the shell of the shrimp’s head, then push the shell off with force. The shell will come off easily.
- Flip the shrimp over, use your thumbs to hold the head and tail of the shrimp, and apply force to separate the legs from the meat first, then follow the shell and completely remove it.

Cooking shrimp broth
You put the minced shrimp into the pot, crack 1 egg into it, then add 1.5 liters of water. You stir the mixture well. Then turn on the stove, boil this mixture on high heat for 10 minutes.

Preparing other ingredients
After buying tomatoes, you wash them clean, remove the stem, and cut them into wedges. 1/4 of a pineapple you wash clean, remove the core, and cut into bite-sized pieces.
You wash the perilla leaves and then chop them finely.

Stir-fry vegetables
Heat a pan on the stove, add 2 tablespoons of cooking oil, and sauté 1 tablespoon of minced garlic over high heat until fragrant. When the garlic is golden, add 1 teaspoon of chili powder, followed by tomatoes and pineapple, and stir well. Stir-fry over medium heat for 3 minutes, then turn off the heat.

Cook the soup
When the shrimp stock has boiled, add the stir-fried tomatoes and pineapple into the soup pot, then skim off the foam.
Add 100 ml of tamarind juice, 1 tablespoon of seasoning, 2 tablespoons of sugar, 1/2 teaspoon of salt, and 1 tablespoon of fish sauce to the soup and cook over medium heat for 5 minutes. Once the soup boils again, taste and adjust the seasoning as needed, then turn off the heat.
When serving, ladle the soup into a bowl and add chopped perilla leaves on top to finish.

Final Product
The shrimp soup cooked with tamarind has a characteristic orange color of shrimp paste, with a sweet and mild sour broth, lightly fragrant with the smell of Vietnamese balm leaves. It is perfect to enjoy with white rice on chilly days.
