- Good ducks are mature ducks that usually have enough feathers, a round breast, and a round gizzard.

How to choose fresh and delicious duck eggs
- You can use your hand to feel the surface of the eggshell; if the surface is rough and slightly textured, it is a fresh duck egg, while a smooth surface indicates that the egg has been stored for a while.
- To check if the egg is still fresh, shake it gently; if there is no movement, the egg is fresh, but if it moves vigorously, the egg is old.
- For duck eggs with a hard outer shell, observe if there is a thin layer of powder surrounding the shell; if there is, it is a fresh egg.

Prepare the duck meat
You should remove the odor from the duck breast with 1 tablespoon of salt, 2 tablespoons of rice wine, and then soak it for 15 minutes.
After that, wash the duck breast thoroughly with water several times until the water runs clear, then drain.

Prepare other ingredients
Tomatoes are rinsed with water and cut into wedges. Onions are peeled and washed.
Green onions and chilies are cleaned and then chopped. Lemons are cut into pieces.
Water spinach, basil, and perilla are also washed clean. Water spinach is shredded. Basil and perilla leaves are picked off.
For the blood, boil it for 5 minutes and then rinse it again with clean water.
Dried noodles should also be boiled; when the water boils for 4 minutes, turn off the heat and let it sit for another 6 minutes, then drain, rinse with cold water, and let it drain.

Make the riêu
First, wash the dried shrimp with water and soak it for about 30 minutes to soften the shrimp, then remove the shrimp and grind the dried shrimp, keeping the soaking water as well.
In a bowl, combine minced meat, crab roe for making bún riêu, ground dried shrimp, and 3 duck eggs, then mix them together.
Next, season with 1 tablespoon of fried shallots, 1 teaspoon of shrimp paste, and 1 tablespoon of sugar, and mix again to let the flavors blend.

Cook the bún riêu
Add 2.5 liters of chicken broth into a pot, add 1.5 liters of filtered water, 1 onion, and duck meat, along with the shrimp soaking water.
Tip: You can buy chicken broth at grocery stores, supermarkets or you can also buy chicken breast or chicken bones to simmer for broth.Season with 1 tablespoon of salt, 1 tablespoon of sugar, and 2 tablespoons of seasoning powder.
Turn on the stove and simmer for 15 – 20 minutes.
Then, add spoonfuls of the riêu mixture into the broth. For the raw sausage, you can also form it into balls and drop it into the pot of simmering duck broth like the riêu.
Next, add tofu and blood pudding to cook.
Finally, add tomatoes and green onions, cook until the water boils again, adjust the seasoning to taste, and turn off the heat.

Completion
Put the noodles in a bowl, then add the crab meat, tofu, tomatoes, mushrooms, and duck meat.
After that, pour the broth over it. Sprinkle a little chopped green onion, chili, and shrimp paste on top, and it is ready to enjoy.
