How to Choose Good Starchy Potatoes
- Good starchy potatoes usually have a bright golden-brown skin, and there should be no unusual black spots on the surface.
- When held, the potatoes should feel firm, not too light, and should not have any soft spots, rot, or unusual leakage.
- Moreover, you should absolutely not buy sprouted potatoes or those with green skin, as this is a sign that the potatoes are toxic and can cause poisoning when consumed.
- Avoid buying potatoes with wrinkled skins, and if pressed, feel too soft or squishy, as these indicate that the potatoes have been stored for too long and are about to spoil.
How to make French fries with an air fryer

Prepare the potatoes
First, after buying the potatoes, use a peeler to remove the skin, then rinse them directly under running water until clean, and let them drain.
Next, use a knife to cut the potatoes into bite-sized pieces. At the same time, soak the potatoes in a basin of diluted saltwater for 5 minutes.
After that, drain the water and rinse them a few times with clean water until the water runs clear, then let the potatoes drain.
Finally, place a pot on the stove with 500ml of water and 1 teaspoon of salt and bring it to a boil. Once boiling, add all the drained potatoes and blanch for about 2 minutes, then remove and rinse with cold water, letting them drain.
How to prepare potatoes without turning brown
- Method 1: Soak the potatoes in vinegar or diluted lemon juice, then wrap them with food wrap and place them in the freezer. When ready to use, just take them out and rinse with clean water.
- Method 2: While preparing the potatoes, simultaneously soak them fully in a basin of cold water.
How to whiten darkened potatoes
- Method 1: The simplest way is to use a knife to cut away the darkened parts, then soak them again in a basin of cold water for 5 – 7 minutes.
- Method 2: Place a pot on the stove with a little fresh milk (either unsweetened or sweetened) along with the darkened potatoes and cook over medium heat for about 5 – 7 minutes. Then, turn off the heat, remove them, and rinse.

Mix the potatoes
Once the potatoes are drained, put them in a bowl with 3 tablespoons of cooking oil and use a spoon to mix well.
Next, take a zip bag and place all the mixed potatoes into it, then place it in the freezer refrigerator for about 3 – 4 hours.
Tip: To prevent the potatoes from freezing and becoming difficult to remove or breaking apart, you should spread the potatoes evenly in the zip bag instead of piling them at the bottom of the bag! -
Fried Potatoes
Take the air fryer and put all the frozen potatoes inside, using chopsticks to spread them evenly, then fry at a temperature of 140 degrees Celsius for about 8 minutes.
Next, take the potatoes out, use chopsticks to turn them evenly, and continue frying at 160 degrees Celsius for 10 minutes.
After that, take the potatoes out, stir them again with chopsticks, and fry for another 10 minutes at 160 degrees Celsius.
Finally, when the potatoes are golden and crispy, turn off the fryer and serve them on a plate to enjoy right away!
Tip:- To avoid unevenly cooked fried potatoes, you should not fry too many at once.
- Since the temperature levels of each air fryer are different, remember to observe while frying to adjust the temperature and time, to prevent the potatoes from burning!
