Prepare the Blood Mixture
You mix the blood pudding mixture with a ratio of 2 water : 1 fish sauce.
Accordingly, for a duck weighing about 3kg, you will use a ladle to measure 1.5 ladles of fish sauce and 3 ladles of water, stirring well. Next, use a knife to cut the duck’s blood and add it to the mixture you just prepared, stir well and set aside.

Boil duck meat
After plucking the duck clean, you will put it into a pot and boil the two wings and the neck first to chop into the blood pudding. When these parts of the meat are cooked, take them out, separate the meat and skin, and then chop them finely. For the duck neck, you can pound it to soften before finely chopping it.
Tip: If you want the duck blood pudding to be richer and tastier, you can also chop liver, heart, gizzard, and intestines into it.The cilantro and Vietnamese coriander should be washed clean, then chopped finely, and mixed with the chopped duck meat, dividing evenly into 3 bowls. Just fill the meat to half of each bowl.

Prepare the blood pudding
After completing all the above steps, you proceed to pour off the layer of water on top of the blood pudding bowl, keeping only the sediment at the bottom, then stir to distribute the sediment evenly.
You should prepare a bowl of water mixed with 1/2 tablespoon of monosodium glutamate. The ratio for successfully preparing the blood pudding will be 1 scoop of plain water : 1 scoop of blood water. Use chopsticks to stir well until the mixture is well combined, then immediately add it to the bowl of minced meat.
Note, you need to let the blood pudding bowl sit for 5 minutes to solidify. When serving, sprinkle some roasted peanuts on top to finish.
