How to choose fresh and delicious thú linh (pig intestines)

  • To buy good thú linh, you should go to the market early, choosing the type of intestines that are full, round, pinkish-white in color, with a golden or milky white liquid inside.
  • Absolutely do not choose any parts of thú linh that are purple or starting to turn green. Because those are intestines that have been stored for too long, starting to spoil, which will not taste good and can be harmful to health.

How to prepare Crispy Wild Animal

  • Preprocessing and marinating the wild animal

    To clean the wild animal, scrub the outside and inside thoroughly with salt, turn it inside out, then use a knife to scrape off the fat and slime stuck inside. After that, rinse it several times with water.

    Tips for cleaning the wild animal without odor

    • Method 1: Turn it inside out or use scissors to cut along the length of the wild animal to easily clean the dirt inside. Then mix the wild animal with a little salt, fish sauce, and a bit of lemon juice, massage it for a while, then use a knife to scrape clean and rinse under strong running water.
    • Method 2: To help eliminate odors and give the wild animal a fragrant smell, you can wash it with Mai Quế Lộ wine, which will be very effective.
    • Method 3: To completely remove the unpleasant smell from the wild animal, when blanching it, add a few slices of ginger!

    After cleaning the wild animal, marinate it with minced shallots and garlic, 1 tablespoon of cinnamon powder, 1 teaspoon of ground pepper, 1 tablespoon of seasoning powder, 1 teaspoon of monosodium glutamate, and 1 tablespoon of sugar for 30 minutes.

  • Fried Wild Boar

    Put a pan on the stove, add 5 tablespoons of cooking oil, when the oil is hot, add 1/2 tablespoon of cornstarch, then add the wild boar and fry over medium heat for about 15 minutes until the wild boar is golden and crispy.

    Tip: Cornstarch helps prevent the oil from splattering while frying.
