How to choose fresh and delicious intestines
- To buy good intestines, you should go to the market early, choose the type of intestines that are full, round, pinkish-white, with a yellow or milky fluid inside.
- Absolutely do not choose any intestines that are purple or starting to turn green. Because those intestines have been kept for too long, starting to deteriorate, eating them will not be tasty and can be harmful to health.

Cleaning the intestines
To clean the intestines, after buying them, place the intestines in a bowl of warm water, add 2 tablespoons of salt and cut 2 lemons in half, then add them to the bowl, soak for 5 minutes and scrub thoroughly both inside and outside.
Rinse the intestines several times until clean. Then, pour boiling water over the intestines to firm them up, then rinse several times to drain.

Marinate the meat
You marinate the meat with 5g five-spice powder, 3 tablespoons of sugar, 2 tablespoons of seasoning, 1 tablespoon of monosodium glutamate, 2 tablespoons of oyster sauce, 2 tablespoons of soy sauce, 2 tablespoons of fish sauce, 1/4 teaspoon of shrimp paste color (or annatto color), and minced garlic and shallots. Cooking the wild boar
