How to choose fresh ingredients
How to choose fresh cauliflower
- About color: You should choose florets that have a uniform, bright color. For white cauliflower, the clearer the white color, the fresher it is. Avoid buying florets with mottled colors, uneven shades, lack of vitality, and yellowing as they may be spoiled or have been stored for too long.
- About appearance: When buying, you should choose florets that are round and evenly shaped, with a high center and no gaps between the flower branches. The green stem should be fresh, and when held, it feels firm. The surface of the cauliflower should be intact, without any chips or bruises.
- About firmness: When you touch the cauliflower, it should have a certain crunch, firmness, and solidity. You should not choose florets that are wilted, with soft stems and wilted leaves as they will not be tasty.
How to choose good dried mushrooms
- You should choose dried mushrooms that have large and thick caps, fine hairs, and are dry. Avoid choosing ones that are rough because they won’t be delicious when cooked.
- Good mushrooms usually have a dark amber color, the top of the mushroom is slightly glossy, and the underside has a milky coffee color.
- Avoid choosing mushrooms that are too black because this type will easily get mushy when soaked in water and is less crunchy and tasty.

Prepare the ingredients
After purchasing, remove the roots of the white cauliflower, then cut it into bite-sized pieces and soak it in salt water for about 10 minutes.
For 30g of dried wood ear mushrooms, place them in a bowl and soak in cold water for about 20 minutes, then slice them into small pieces.
How to properly soak dried wood ear mushrooms:
- You should only soak dried wood ear mushrooms for a maximum of 3 – 4 hours before cooking. Avoid soaking them too long or overnight, as this will lead to the production of many toxins in the mushrooms, which are harmful to health.
- Soak the mushrooms in cold water, not warm water, because while mushrooms swell faster in cold water, the morpholine in the mushrooms does not have much time to neutralize.
Prepare an additional 25g of pork that has been cleaned and soaked in salt water for about 10 minutes. Then, slice the pork into thin pieces. Next, for the garlic, peel it and crush it.
For the chili, slightly tilt the knife and slice it into small pieces. Wash the green onions and slice the stems at an angle, while cutting the leaves into small sections. Place all the ingredients onto a plate.
-
Boil the cauliflower
First, place a pan on the stove, pour in water, and bring it to a boil. Once the water is boiling, add the cauliflower and blanch it for about 7 minutes.
Next, when you see the water boiling again, add the mushrooms and boil them together with the cauliflower for about 2 more minutes. After that, use a ladle to scoop the cauliflower and mushrooms onto a plate and let them cool before stir-frying.
Tip: Blanching the cauliflower and mushrooms in boiling water before stir-frying helps the spices absorb quickly, making the dish tastier. -
