How to choose fresh and delicious eel
- You should choose eels that are moderate in size, about the size of your thumb, as they have the best meat.
- You should choose eels with a yellow belly, long tails, and still alive.
- Avoid choosing large, dark-bodied eels as they are often farmed and the meat will be mushy and not fragrant.

How to prepare Stir-fried Eel with Turmeric
-
Prepare the eel
After purchasing, clean the eel thoroughly to remove the slime, discard the head and internal organs.
Wash the eel with 1 tablespoon of salt and 2 tablespoons of white wine. Rub the eel meat with the mixture for about 5 minutes, then rinse with clean water.
Cut the eel into bite-sized pieces, about 2 finger lengths.
How to clean eel meat from slime and odor:
- Method 1: You can use kitchen ash to cover the eel and scrape off the ash to effectively clean the slime.
- Method 2: Use salt to rub the eel, then rinse several times along the back of the eel with lemon juice to help remove the slime.
- Method 3: To clean the eel’s intestines, soak the eel in rice water for about half a day; the intestines will be clean and odorless.
-
Marinate the eel
Marinate the eel with 2 teaspoons of fish sauce, 1/5 teaspoon of monosodium glutamate, 1/2 teaspoon of sugar, 2 teaspoons of seasoning powder, and 1 teaspoon of cooking oil.
To make the dish more colorful and eliminate the fishy smell, add 1/2 teaspoon of turmeric powder and 2 tablespoons of chopped green onion, mix well and marinate for about 15 minutes.
-
Sautéed Eel
Add 2 teaspoons of cooking oil to the pan, wait for the oil to heat up, and then add 1 tablespoon of minced green onion to sauté until fragrant.
When the onion is fragrant and golden, add all the marinated eel, stir-frying evenly over medium heat. When the eel meat is firm, add 100ml of water and cover the pan, sautéing for another 10 minutes.
When the sauce has thickened, season to taste and turn off the heat, plating it up and garnishing with a sprig of cilantro.
