All-purpose flour 100 gr Chicken eggs 2 eggs Ripe bananas 4 bananas Wine 1 tablespoon Coconut milk 200 ml Sandwich 7 slices Unsweetened milk 400 ml Vanilla extract 5 ml Sugar 110 gr Salt 1/2 teaspoon Butter A little

How to Choose Fresh Bananas

  • Choose a bunch of bananas that are not uniformly colored (some ripe, some green) and have dark or deep pink spots.
  • Do not choose bananas that are uniformly ripe with a deep yellow skin.
  • Naturally ripened bananas will have a yellow stem and body. If the stem is green but the fruit is uniformly yellow, it has definitely been soaked in chemicals.
  • Tree-ripened bananas will have a fragrant smell and natural sweetness, soft all around. Bananas treated with chemicals will feel slightly crunchy, hard, and have a bitter or sour taste when eaten.

How to make Baked Banana Cake using a rice cooker

  • Prepare and sauté the bananas

    First, peel 4 bananas and slice them into pieces about 1/2 inch thick.

    Place a pan on the stove, add the sliced bananas, 1 tablespoon of wine, and 1 tablespoon of sugar. Sauté the bananas over low heat until the sugar dissolves and thickens slightly, then turn off the heat.

  • Mix the egg and milk mixture

    Add 400ml of unsweetened fresh milk, 200ml of coconut milk, 100gr of sugar, 1/2 teaspoon of salt, 5ml of vanilla extract, and 2 eggs into a bowl. Stir well to combine the ingredients.

    Next, tear 7 pieces of sandwich into small pieces and add them to the egg and milk mixture, mix well and soak for 15 minutes.

  • Mix the cake batter

    Next, add 100gr of flour to the egg and milk mixture, mixing well until the flour is completely dissolved.

    Then, add in 2/3 of the banana mixture with sugar (about 1 rice bowl), mix well one more time to complete.

  • Cooking the Cake

    Spread a layer of butter around the pot to prevent sticking, line with a piece of parchment paper, then spread another layer of butter on top.

    Next, sprinkle a thin layer of sugar at the bottom of the pot, then layer the remaining caramelized bananas.

    Then, pour the cake batter in, cover tightly, and press Cook for the first time. When the button switches to Warm mode, let it sit for another 15 – 20 minutes before pressing Cook again.

    The total baking time will be around 40 – 50 minutes.
