Cake flour 220 gr (type 8 flour) Unsalted butter 100 gr Cream cheese 225 gr Mascarpone cheese 125 gr Heavy cream 100 gr Chicken eggs 2 pieces Sugar 70 gr Powdered sugar 60 gr Lemon juice 1 teaspoon Vanilla extract 1 teaspoon

How to make Baked Cheese Tart

  • Beat the butter and egg mixture

    Add 100g of unsalted butter and 60g of sifted powdered sugar into a bowl, then use a mixer to blend the mixture until smooth.

    Next, add 1 egg and continue to mix evenly with the mixer.

  • Mixing the dough

    Gradually add 220g of cake flour to the butter and egg mixture, then use a whisk to mix until a uniform mass is formed, with the ingredients well combined.

    Next, wrap the dough tightly with a layer of cling film and place it in the refrigerator for 30 minutes.

    Divide the tart dough into 13 equal parts and roll them into balls.

    Then, use your hands to flatten the dough into thin pieces and press them firmly into a round mold.

    Next, place the tart mold in the refrigerator for 30 minutes. After 30 minutes, use a fork to poke holes evenly on the surface of the tart base.

    Tip:
    • Applying a little butter on your hands will make handling the dough easier. Additionally, you should also spread a thin layer of butter inside the mold to prevent sticking!
    • Poking holes evenly on the surface of the dough will help prevent the tart from puffing up and cracking while baking.

  • Baking the crust

    Preheat the oven to 200 degrees Celsius 15 minutes before baking the crust to stabilize the temperature.

    Place a piece of parchment paper on the dough, then evenly spread a layer of baking beans on top. Next, bake the crust for the first time for 8 minutes at 180 degrees Celsius.

    After 8 minutes, let the crust cool slightly, then brush a thin layer of egg white on top of the crust and continue to bake for a second time for an additional 5 minutes.

    Tip: If you don’t have baking beans, you can use beans to sprinkle on top of the crust.

  • Whipping the cream cheese

    Smoothly mash 225g of cream cheese, then add 125g of mascarpone cheese and continue to mix well.

  • Finish the cream cheese

    Next, add 100gr heavy cream, 70gr sugar, 1 teaspoon of lemon juice, 1 egg yolk, and 1 teaspoon of vanilla extract. Stir well until the mixture is combined.

  • Complete the cake

    Pipe the cream cheese filling into the tart shell and bake for the third time for 10 minutes to finish.
