How to choose fresh ingredients
How to choose fresh clams
- Choose large clams that feel heavy in hand, are hard, thick, and have shells that are not broken.
- Clams that are open and do not close are dead, you should not buy them.
- Live clams do not have a foul smell, but dead clams have a strong fishy odor. Such clams should not be purchased.

How to choose fresh and delicious banana flowers
- You should choose banana flowers that are not bruised, with the outer covering still intact.
- The outer covering has a dark purple-red color, and if there is a fine powder on the surface, then those banana flowers are still very fresh.
- When holding the banana flower, it feels heavy and firm; if you gently squeeze it and feel a certain crispness, it should be chosen for purchase.
- You should not buy banana flowers that have strange colors, darkened skins, fibers turning brownish-yellow, and losing the white powder. Because those are banana flowers that are no longer fresh and may have been treated with chemicals.

How to choose fresh and delicious tomatoes
- When buying tomatoes, you should choose plump ones with bright red color, uniform color, and a light, characteristic fragrance.
- Freshly picked tomatoes will have the stem tightly attached to the top. Prioritize choosing tomatoes of medium size, not too big and not too small, because overly large tomatoes will have thick flesh, which will be less tasty when cooked.
- Avoid choosing bruised tomatoes, unevenly ripened ones, those with dropped stems, or those with pest marks or wrinkled skins that feel soft and mushy when touched.

How to make Banana Flower Soup with Clams
-
Prepare the ingredients
Prepare a bowl of water, squeeze the juice of 1 lemon into it, then slice the banana flower thinly and soak it in the lemon water for about 10 – 15 minutes. After that, rinse well and let it drain.
Wash the tomatoes and cut them into wedges, peel and wash the shallots, then slice them thinly. Wash and chop the herbs. Peel and wash the tamarind.
-
Prepare the clams
Wash the clams thoroughly, then place them in a pot with 500ml of water and bring to the stove to boil over medium heat for about 10 minutes until the clams are cooked.
After that, remove the clams and separate the meat, keeping the clam cooking water for the next step to make the soup.
-
Sautéing tomatoes
Place a pot on the stove, add 1 spoon of cooking oil, and when the oil is hot, add the shallots and sauté until fragrant. Next, add the chopped tomatoes and sauté over medium heat for about 3 – 4 minutes until the tomatoes soften.
-
Cooking the soup
Add the clam broth to the sautéed tomatoes, add 1 green tamarind and 1 chili, and cook for about 10 minutes over medium heat, then add 2 teaspoons of seasoning, 1/2 teaspoon of salt, and adjust the soup to have a slight sour and sweet taste to your liking before removing the tamarind!
Next, add the clams and stir well, then add the banana flower to the pot and cook for another 2 minutes until the banana flower is just cooked. Finally, add the chopped green onions and Vietnamese perilla, then turn off the heat.
Tip: To keep the clam meat sweet and not chewy, you should add the clam meat at the final step, and do not sauté the clam meat beforehand!
-
Completion
Scoop the banana flower soup with clams into a bowl, add a little chopped cilantro, and it’s done.
-
