Prepare the clams
Buy clams and wash them thoroughly with clean water, then prepare a large bowl of water with a tablespoon of salt and 2 chili peppers, and soak the clams for 1 – 2 hours to allow them to release all the slime, sand, and grit. Keep the clam broth and let it settle.
Simple tip to separate clam shells:
- Prepare a pot of boiling water and add 1 tablespoon of salt. When the water reaches a stable boil, reduce the heat to medium.
- Add the clams to the pot and stir evenly with a spoon to separate the shells.
- Use a ladle to scoop the clam meat floating on the surface of the pot and wait for the clams to cool, then rinse with cold water. If rinsed while still hot, the clams will shrink and not taste good.
