Ingredients for Thick Noodle Soup with Baby Clams and Coconut Milk Serves 4 people

Baby clams 5 kg Thick noodles 500 gr Coconut milk 50 ml Carrot 1 piece Cilantro 50 gr Shallots 2 pieces Chili 3 fruits Fish sauce 3 tablespoons

Tips for choosing good baby clams:

  • Do not choose clams with broken or cracked shells as they can easily be contaminated with harmful seafood bacteria
  • Do not buy frozen clams or those packed in plastic bags as they will not be fresh and may be treated with chemicals

Ingredients for thick noodle soup with baby clams and coconut milk

How to prepare Coconut milk Hến noodle soup

  • Prepare the clams

    Buy clams and wash them thoroughly with clean water, then prepare a large bowl of water with a tablespoon of salt and 2 chili peppers, and soak the clams for 1 – 2 hours to allow them to release all the slime, sand, and grit. Keep the clam broth and let it settle.

    Simple tip to separate clam shells:

    • Prepare a pot of boiling water and add 1 tablespoon of salt. When the water reaches a stable boil, reduce the heat to medium.
    • Add the clams to the pot and stir evenly with a spoon to separate the shells.
    • Use a ladle to scoop the clam meat floating on the surface of the pot and wait for the clams to cool, then rinse with cold water. If rinsed while still hot, the clams will shrink and not taste good.

    Wash the carrots and cut them into small cubes for a nicer broth color. Chop the onion and scallion finely to prepare for the clam stir-fry step.

    Add cooking oil to the pan and turn on the medium heat. When the oil is hot, add the chopped onion and sauté until fragrant.

    Finally, add the tapioca noodles and clams, and the dish is ready to be served.

    Note: If you make the tapioca noodles at home, after kneading and rolling out the dough, cut the noodles directly into the broth instead of passing them through a noodle press.

    Chop the chili finely and put it in a bowl containing 3 tablespoons of fish sauce. The fish sauce with chili is simple but enough to enhance the flavor and richness of the dish.
