  • To make the best minced meat, you should buy whole pieces of meat and ask the seller to grind it for you or grind it at home using a meat grinder.

How to make Brown Rice Cake

  • Prepare the ingredients

    Soak shiitake mushrooms and wood ear mushrooms in cold water for about 2 hours until soft, then trim the stems, rinse 2 – 3 times with clean water, and chop the mushrooms on a cutting board.

    Peel shallots, rinse with water; keep 3 whole bulbs and slice 2 bulbs thinly. Clean the green onions and cilantro by removing roots and wilted leaves, rinse well, and chop finely.

    Place minced meat, chopped shiitake mushrooms, and wood ear mushrooms into a bowl, mix well with 1 teaspoon of seasoning, and 1 teaspoon of monosodium glutamate. Marinate for about 15 minutes to let the meat absorb the spices.

  • Mix the brown rice cake batter

    To make the brown rice flour finer, sift the flour through a sieve into a bowl. Next, add 80g of tapioca starch, 1 teaspoon of salt, and 400ml of water into the bowl of brown rice flour, stirring well to combine the mixture, then let it sit for about 4 – 6 hours.

    After soaking for the required time, drain the water and keep the sediment at the bottom of the bowl. Next, add 400ml of water to the flour, stir well, and pour through a sieve into a large pot.

  • Cook the brown rice cake

    Place the flour pot on the stove, turn on low heat, add 1/3 teaspoon of salt, and stir well. Keep stirring until the mixture thickens, then add 1 tablespoon of cooking oil, stir for another 2 – 3 minutes, then turn off the heat.

  • Bone broth and stir-fried meat

    Boil a pot of water with 1 teaspoon of salt, then add the cleaned bone marrow and blanch for about 2 – 3 minutes. Next, take the bones out and rinse them with water to remove all dirt.

    Put the bones into a pot with 1 liter of water and 3 shallots, place the pot on the stove over low heat and simmer for about 30 minutes from the time the water boils, add another teaspoon of seasoning for a richer broth, then turn off the heat.

    Place a pan on the stove, heat 1 tablespoon of cooking oil and sauté the shallots until fragrant. Then add the marinated minced meat and stir evenly, when the meat is cooked, turn off the heat and transfer to a bowl.

    Scoop a sufficient amount of rice cake into a bowl, add 2 tablespoons of minced meat, and pour more bone broth to enjoy. You can add a little fish sauce, ground pepper, sliced chili, and chopped herbs to enhance the flavor!
