Egg yolks 5 pieces Heavy cream 480 ml Whole milk 240 ml Vanilla extract 1/2 teaspoon Sugar 175 grams

What is heavy cream?

  • Heavy cream is made from milk, with a fat content higher than whipping cream, typically ranging from 36% to 40%.
  • Heavy cream, once whipped, holds its shape better, making it ideal for decorating cakes or for making fresh cream desserts.
  • Additionally, heavy cream has a sweet taste, whereas whipping cream does not have a pleasant flavor, so during the preparation of the dish, you should pay attention to adjust the amount of sugar appropriately when using heavy cream!

How to make Egg Cream (cold cream)

  • Beat eggs with sugar

    Put 5 egg yolks into a bowl, then gradually add 125g of sugar and use the egg beater to mix at low speed until the egg mixture becomes frothy and turns light yellow.

    You should divide the sugar into several small portions and add them gradually to make it easier for the egg mixture to froth and ensure it is smooth!

  • Mix the egg cream mixture

    Place a pot on the stove, add 480ml of heavy cream to the pot, cook over medium heat, then add 50g of sugar. Stir well until this mixture is slightly boiling, then turn off the heat.

    Next, slowly pour this cream mixture into the sugar and egg mixture from earlier, stirring continuously to fully combine the ingredients.

    Continue to place this mixture back on the stove, add 1/2 teaspoon of vanilla extract, and cook over low heat for 5 minutes. After that, turn off the heat and pour this mixture into a bowl.

    Finally, add 240ml of whole milk, stir the cream mixture one more time, then cover the bowl tightly with plastic wrap and place it in the refrigerator for 5 hours.

  • Whip the egg cream mixture

    After 5 hours, take the egg cream mixture out, use a mixer to beat it at medium speed for about 10 minutes until the mixture nearly doubles in volume.

  • Whip a second time and freeze

    Use plastic wrap to cover the mouth of the bowl again, then place it in the freezer for 2 hours. After 2 hours, take it out and continue to use the mixer to blend this mixture smoothly once more for about 5 minutes, then wrap it again and freeze solid for 4 – 6 hours.

    After 4 – 6 hours, you can take it out and enjoy it right away!

    The egg cream (cold cream) is rich and has a very pleasant sweetness, melting in your mouth as you eat.

How to Make Egg Cream for Dipping Bread

  • Whip the egg cream

    Put 4 egg yolks into a bowl, then use an egg beater to beat the egg yolks on low speed for 5 minutes.

    Divide 50gr of powdered sugar into 2 portions, adding each portion to the egg mixture and continue beating until the mixture is smooth and has a light yellow color.

    Then, divide the egg cream into 2 equal portions.

  • Make Cocoa Egg Cream

    Add 50gr of cocoa powder to one portion of the egg cream and stir well to combine.
