Tapioca flour 150 gr Rice flour 10 gr Cocoa powder 5 gr Brown sugar 100 gr

What is cocoa powder?

  • Cocoa powder is usually produced by grinding cocoa beans, and it typically has a dark brown color.
  • When smelled, it has a characteristic aroma; pure cocoa powder usually has a slightly bitter and mildly sour taste.
  • Cocoa powder contains a significant amount of minerals beneficial to our health, such as magnesium, calcium, zinc, and more.

Distinguishing cocoa powder from chocolate powder

  • The first sign to differentiate between cocoa powder and chocolate powder is color. Cocoa powder usually has a slightly dark brown color, while chocolate powder can come in various colors depending on whether it is dark, white, or milk chocolate.
  • Additionally, you can taste it to tell the difference; cocoa powder stands out with a mild bitter and slightly sour flavor, while chocolate powder typically has a dominant sweet taste, mixed with a very slight bitterness.

How to Make Black Sugar Tapioca Pearls

  • Mixing and Kneading the Dough

    Pour 150g of tapioca flour, 10g of rice flour, 5g of cocoa powder, and 30g of brown sugar into a bowl and use a whisk to mix the ingredients thoroughly.

    Next, add 120ml of boiling water and continue to stir well. After about 5 minutes, the tapioca mixture will gradually become sticky.

    Then, pour all the dough onto a table. Divide the dough into 4 parts and shape each into a long cylinder with a diameter of about 1 cm. After that, cut each cylinder into small pieces about 1/2 finger length and shape each piece into a ball.

    Dust a thin layer of tapioca flour over the surface to prevent the tapioca pearls from sticking together. Once you have finished making all the tapioca pearls, pour everything into a sieve to remove the excess tapioca flour.

  • Making black sugar pearls

    Put a pot on the stove, pour in 500ml of water, wait for the water to boil, add all the pearls, adjust to medium heat, and cook for 25 minutes.

    After 25 minutes, turn off the heat, take the pearls out and soak them in cold water immediately. After 2 minutes, take them out to drain.

    Continue to put a pan on the stove, add 70gr of brown sugar and 50ml of water, and bring this mixture to a boil. While waiting for this mixture to boil, use a spoon to stir well to dissolve the brown sugar completely in the water.

    After 5 minutes, add the pearls and cook for an additional 7 minutes. Stir continuously to ensure the pearls cook evenly and do not burn.

    Once the pearls are cooked and the black sugar starts to caramelize, turn off the heat and let it cool for 30 minutes.

    The black sugar pearls have a beautiful deep black color, and when enjoyed, they provide a chewy texture that blends with the light sweetness of the black sugar.

How to make Fresh Milk Egg Cream with Brown Sugar Boba

  • Whipping the Egg Cream

    Put 1 egg yolk, 25ml topping cream, 5ml vanilla extract, and 50ml vegetable fat cream into a cup. Then use a hand mixer, set it to medium speed, and whip the mixture until it becomes fluffy.

    The whipped mixture should be thick and smooth, doubling in volume.

    Then add some brown sugar boba into the cup, adjusting the amount to your taste. Next, tilt the cup evenly to coat the sides with the brown sugar.

    Add some ice cubes and pour in 200ml of fresh milk until the cup is nearly full. Finally, tilt the cup and gently pour the whipped egg cream on top.

    Sprinkle a little brown sugar on the cream, then use a torch to melt the sugar until it forms a caramel layer on top. Now you can enjoy it right away.

  • After boiling, use a sieve to remove the tapioca pearls, soak them in cold water or rinse under running water to prevent them from sticking, then mix the pearls with brown sugar syrup, and finally keep them warm in a rice cooker (keep warm mode). This method will help your tapioca pearls stay soft without hardening for a whole day.
  • To store tapioca pearls for a longer time, place them in an airtight container or a tightly sealed plastic bag, then put them in the refrigerator’s cool compartment. With this method, the tapioca pearls can last for 3 – 4 days without fear of spoilage.
  • When you want to use them, just boil the tapioca pearls again and use them. However, if you want the pearls to taste best, it’s recommended to make and eat them immediately.

Tips for storing whipping cream

  • Unused whipping cream can be kept in the refrigerator’s cool compartment; clean the cream stuck to the rim of the container, wrap it tightly with plastic wrap, and then put it in the cool compartment. This method will keep whipping cream fresh for about half a month. Do not store whipping cream in the freezer as it will cause the cream to separate.
  • Alternatively, you can pour the excess whipping cream into a clean glass bottle (washed, rinsed with hot water, and dried) and seal it tightly, placing it deep in the refrigerator’s cool compartment, avoiding the door. This method will help you keep the whipping cream for up to 1 month.
