  • You can find glutinous rice flour at markets, grocery stores, or on e-commerce websites. When purchasing, pay attention to the expiration date, ensure the flour is dry, pure white, and does not have any dirt or signs of mold.

How to choose fresh chicken eggs

  • Choose eggs that have a sturdy shell, uniform color, and are not cracked or have black spots.
  • Touch the egg with your hand; if it feels bumpy and slightly rough, then it is a fresh egg, so choose these rough-shelled ones.
  • Gently shake the egg and hold it to your ear to listen; if the egg makes a sound, it means the egg is old and should not be selected.

  • Beat the eggs

    You crack 1kg of chicken eggs into a large bowl or basin, then use an egg beater to mix the eggs together.

    If you buy coarse flour with large grains, you should put it in a grinder or use a mortar to grind it finely.

    Tip: You should crack each egg into a cup to check that the egg is fresh and not spoiled before adding it to the bowl. Spoiled eggs cannot be used for baking.

  • Mix the Bánh thuẫn mixture

    After beating the eggs, add 1kg of granulated sugar, and use the mixer to completely dissolve the sugar.

    When the sugar has dissolved, continue to add 1.4kg of finely ground flour and 2 vanilla tubes to create a fragrant smell, then use the egg beater to mix at a low speed. Beat for about 20 – 30 minutes until the flour mixture is dissolved and smooth, then cover and let it rest for about 1.5 – 2 hours at room temperature.

    After resting, gradually add 50ml of pineapple juice and continue to beat the mixture for another 15 minutes to complete.

  • Bake the cake

    You break the charcoal into small pieces, then light it until it turns red. Put a little charcoal into the stove, and the remaining charcoal you place on the lid of the cake mold to heat for about 3 minutes.

    While heating the mold lid, place the cake mold on the stove and brush a thin layer of cooking oil into the molds to prevent sticking. Then pour the mixed cake batter into each mold. Cover the heated lid for about 3 minutes to cook the cake.

    Open the mold lid and use a skewer to carefully take the cake out. Then continue the process until all the batter is used up. Each batch of cakes should only be baked for about 3 minutes.

    Tip: You can scoop each spoonful of batter into the mold to bake, or for convenience, you can put it into a piping bag to avoid spilling batter onto the mold.
