How to cook Abalone Stir-fried with Shiitake Mushrooms

  • Prepare the abalone

    Use a sturdy long-handled spoon to separate the abalone meat from the shell.

    Then wash it clean with water.

    For large bok choy, you can cut them into 2 or 4 pieces as desired.

    Wash the bok choy thoroughly under water several times, paying attention to the folds of the leaves where dirt, insects, or dust might be present.

  • Prepare shiitake mushrooms

    If you are using fresh shiitake mushrooms, wash them thoroughly and then squeeze out the excess water so that the mushrooms can absorb the seasoning when stir-frying.

    If you are using dried shiitake mushrooms, soak them in water for about 5 hours before cooking.

  • Make the sauce

    In a bowl, add 1 tablespoon of sugar, 1 teaspoon of salt, 2 tablespoons of dark soy sauce, 1 tablespoon of soy sauce, 1 tablespoon of oyster sauce, 2 tablespoons of sesame oil, 2 tablespoons of water, and 1 teaspoon of cornstarch.

    Stir everything well to combine the sauce.

    Sauté minced garlic until fragrant, then stir-fry the vegetables until just cooked. Transfer the vegetables to a separate plate.

    Using the same pan from the previous step, continue to stir-fry the shiitake mushrooms for 3 – 4 minutes.

    Then add the oyster mushrooms and stir-fry over high heat for about 30 seconds. After that, lower the heat and add the sauce.

    Reserve a little sauce for garnish.

    Wait for 3 – 4 minutes, then turn off the heat and prepare to serve on a plate.
