Basa fish 1 kg (sliced) Red bell pepper 1 piece Green bell pepper 1 piece Onion 1/2 bulb Spring onion 2 stalks Minced ginger 1/2 tablespoon Garlic 5 cloves Coriander a little Cornstarch 150 gr Cooking wine 2 tablespoons Ketchup 2 tablespoons Rice vinegar 1 tablespoon White sesame 1 teaspoon Soy sauce 1 tablespoon Sesame oil 1 tablespoon Cooking oil 200 ml Common seasoning a little (salt/ sugar/ pepper)

  • A good fillet piece usually lies flat, has a light pink color, and feels firm and solid to the touch, not soft and flaky.

    Wash the bell peppers with diluted salt water, remove the seeds and core, and cut into square pieces.

    Peel the onion, remove the root, wash it clean, and cut the onion into small square pieces.

    Wash the scallions, cut off the roots, remove any wilted or damaged leaves, and separate the green part from the white part.

    Peel the garlic, wash it clean, and chop it finely. Wash the cilantro.

    Cut along the length of the fish fillet to divide it into 2 thin portions about 1/2 finger thick, then continue to cut the fillet in half horizontally.

    Place the fish fillet in a large bowl, marinate it with 2 green onion tops, 1 tablespoon of soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of sesame oil, 1 teaspoon of pepper, and mix well to ensure the seasoning penetrates the fish. Marinate the fish for 30 minutes.

  • Dredge and fry the fish

    Add water to completely submerge the fish in the marinating bowl to help the fish stick to the flour better. Then take each piece of fish and dredge it in a layer of cornstarch.

    Heat a pan filled with oil on the stove, wait for the oil to be hot, then drop each piece of fish in to fry until golden and crispy, then turn off the heat and remove the fish to drain the oil.

  • Sauté vegetables

    Add 1 tablespoon of cooking oil to a hot pan, sauté 1/2 tablespoon of minced garlic and 1/2 tablespoon of minced ginger until fragrant.

    When the garlic is golden and fragrant, add bell peppers and onions and sauté on high heat, seasoning with 1/2 teaspoon of salt, 2 tablespoons of sugar, 1/2 teaspoon of pepper, 1 tablespoon of rice vinegar, and 1 tablespoon of cooking wine.

    When you see the vegetables are cooked, reduce the heat, add 2 tablespoons of ketchup and mix 1 teaspoon of cornstarch with 1 tablespoon of water, then add it in, stirring until the sauce thickens slightly.
