Beef leg 1 piece (2kg) Chinese herb seasoning 1 pack Shallots 7 bulbs Chili 10 fruits Lemongrass 5 stalks Cooking oil 3 tablespoons MSG 1 teaspoon

How to choose quality beef leg

  • Good, fresh beef leg pieces usually have a bright pink color, a dry surface, a flat cut, and natural color.
  • To make this dish delicious, you should choose the front leg part, as the front legs are more active, resulting in firmer and crunchier meat and tendons.
  • Absolutely do not choose beef legs that are pale white or bluish, feel slimy to the touch, and have an unpleasant smell.

How to prepare Braised Beef Trotters with Chinese Medicine

  • Prepare the ingredients

    Wash the trotters thoroughly and cut them into bite-sized pieces.

    Trim the lemongrass by cutting off the roots, removing the old outer layers, and washing it well with water, then tie it together. Peel the shallots and wash them clean.

  • Boil the beef trotters

    Place a pan on the stove, add 1 tablespoon of cooking oil and about 1 liter of water, and put the trotters in. To remove the unpleasant smell, add about 4 stalks of lemongrass and 1 chili.

    Boil for about 20 minutes until the trotters are cooked, then remove them to a bowl. Rinse the trotters with water.

    Place a pan on the stove, add 2 spoons of cooking oil, wait for the oil to heat up, then add shallots, chili, and herbal seasoning, stir briefly before adding the shank, then pour in 700ml of water.

    Add 1 teaspoon of monosodium glutamate, stew for about 45 minutes on low heat. After 45 minutes, the shank will be tender, well infused with seasoning, you can adjust the taste to your preference and stew for another 10 minutes.
