How to choose fresh ingredients
How to choose fresh beef
- You should prioritize choosing pieces of beef that are bright red with white marbling and have bright yellow fat. If you gently press on the piece of beef, it should have good firmness and elasticity, not feel sticky, and should not have any unpleasant or strange odors.
- In addition, you should choose tender, small pieces of beef that do not appear too smooth. If you can find veal, that would be even better, or you should choose female beef as it is tastier than male beef.
- On the contrary, you should avoid buying pieces of beef that are pale green or dark red, with dark yellow fat, appearing with white spots on the meat and feeling mushy and slimy to the touch.

How to choose fresh and delicious carrots
- You should choose those roots that are medium-sized, straight and elongated towards the tail, with smooth skin, feel firm in hand, and are slightly hard.
- Choose carrots that are bright orange, with a fresh green leaf stem firmly attached to the root.
- Do not choose roots with wilted, bruised tops, damaged bodies, slimy parts, or dark spots, and when pressed, feel soft.
- Avoid choosing roots that are too large. The leaves, stems at the base, and shoulders of the roots are large and thick because these are older roots, which will have more fibers and less nutrients.

Prepare the ingredients
To save time, you can buy pre-cut beef, packaged, rinse it with clean water, drain it, and cut it into bite-sized pieces to put into a bowl.
Peel the carrots, rinse them with water, then shape them into flowers or cut them into pieces as desired.
Peel the onion, rinse it clean, then cut it into wedges.
Peel the garlic, and ginger, rinse them briefly with water, then finely chop them.
Cut off the root of the celery, rinse it with clean water and drain, then cut it into pieces about 2 finger lengths.
-
Marinate the beef
Marinate the beef in a bowl with a mixture of ingredients including: 1 tablespoon of seasoning, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, 1 tablespoon of cooking oil, 1/2 of minced garlic, 1/2 of minced ginger.
Mix well for the spices to absorb evenly, let the beef sit for about 20 minutes for the spices to penetrate.

Stir-fried beef with carrots
Place a pan on the stove, add 1 tablespoon of cooking oil and heat over medium heat. When the oil is hot, add the marinated beef from earlier and stir-fry for about 1 minute until the beef is cooked, then turn off the heat and transfer the beef to a plate.
Next, using the same pan, turn on the stove and add another tablespoon of cooking oil. When the oil is hot, add the remaining minced garlic and ginger, sautéing until fragrant.
Then add the carrots, stir gently, and season the mixture in the pan with: 1 tablespoon of oyster sauce, 1/2 teaspoon of sugar, and 1 teaspoon of seasoning powder, stir-frying evenly. Add a little water to help the carrots cook faster, and stir-fry for about 4 – 5 minutes until the carrots are crisp, then continue to add the onions and stir for about 2 – 3 minutes.
When the onions are just cooked, add the previously stir-fried beef back into the pan, turn the heat up high, and stir quickly while adjusting the seasoning to taste. Finally, just add the celery and stir once more before turning off the heat.
