Oxtail 1 piece (about 1 kg) Onion 1/2 bulb (cut into wedges) Green onion 2 stalks Sliced ginger 1/2 bulb Chili 4 pieces Bay leaves 3 leaves Whole pepper 1 teaspoon Cardamom 2 pieces Large garlic 1/2 bulb Cinnamon 50 gr Fermented tofu 10 gr ( 2 pieces) Soybean paste 4 tablespoons Fish sauce 3 tablespoons

How to choose fresh and delicious oxtail

  • You should buy the whole oxtail, not the chopped pieces, as it is difficult to distinguish between fresh and spoiled meat.
  • The meat on the oxtail should be bright red, and it should not be mushy or have an unusual color. If the meat is too bright, be cautious as it might have been soaked in chemicals.
  • The skin of the oxtail should have a slight yellow tint, not too yellow or silver, as this could indicate that the oxtail has been preserved for a long time in the freezer.
  • Choose a reputable place to buy, selecting stores where you are well-informed about the source of the food. You may opt for clean food stores or supermarkets to ensure the origin.

How to prepare Five-Spice Braised Oxtail

  • Prepare the oxtail

    Clean the remaining hair on the oxtail after purchasing. Next, wash the oxtail with alcohol, using crushed ginger to rub the outside to eliminate any unpleasant odors and dirt. Then, cut it into bite-sized pieces.

    Tip to prepare oxtail without smell: Besides the above method, you can also eliminate the smell of oxtail by boiling a pot of water with 500ml over medium heat. When the water boils, blanch the oxtail for 7-10 minutes, then remove and wash it clean.

    You put the beef tail and a few slices of fresh ginger into the pot and then pour water to cover the beef tail. After that, you boil the beef tail on high heat for about 30 minutes.

  • Make five-spice sauce

    You place a pan on the stove and then add 50g of rock sugar. After that, you melt this rock sugar. When you see the sugar boiling, you add 100ml of water and continue to cook until it boils. Next, you add 4 tablespoons of soybean paste and 2 pieces of fermented tofu, then stir well.

  • Beef Tail Stew

    You gradually add to the pan the five-spice sauce, sliced onion, cinnamon, cardamom, bay leaves, chopped green onions, 1/2 bulb of whole garlic, 1/2 teaspoon of whole pepper, and stir for about 5 minutes over high heat. Then you add the beef tail, season with 3 spoons of fish sauce, and stir well to let the beef tail absorb the flavors.

    Finally, you transfer it to a pot and continue to stew the beef tail for about 30 minutes over medium heat before turning off the stove.
