- When buying beef, choose pieces that are bright red, with clear marbling, and fat that is light yellow and not too dark.
- When pressing on the meat, it should feel elastic and firm.
- Avoid buying pieces that are pale green, mushy, have a bad smell, or contain small white spots in the meat.
How to choose safe, quality cabbage
- Fresh and delicious cabbage will have a shiny color and a round shape. Do not buy those with flat or oval shapes as these are hollow cabbages, not firm.
- It is recommended to choose cabbages with a slightly dark green color; if it is purple cabbage, it should be deep purple, and choose those that feel heavy and firm.
- Avoid choosing cabbages with black-brown spots on the body or those that are bruised; these are cabbages that have been stored for a long time and are no longer crispy and fresh.

Prepare the ingredients
Wash the cabbage, cut it into thin strips, then briefly blanch the cabbage in boiling water for about 2 minutes, then transfer it to a bowl of ice water and soak for 5 minutes, then remove and squeeze out the excess water.
Season the cabbage with 1/2 spoon of salt, 1 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate, mix well and marinate for 15 minutes to allow the flavors to blend.
Wash the Vietnamese coriander, chop it finely. Peel and mince the shallots and garlic. Remove the stems from the chili, wash it, and slice it thinly.
Roast the peanuts until golden and then crush them slightly or leave them whole as desired.

To wash the beef clean and eliminate the odor, use salt to massage the piece of beef for about 1 minute, then rinse thoroughly with 2-3 times of water, let it drain and slice it thinly for eating.

- Method 2: Soak the beef in white wine for about 15 minutes and then rinse it with clean water several times.
- Method 3: Another useful way is to massage the beef with vinegar or lemon juice for 1-2 minutes, then rinse it clean under running water.
- Method 4: To make the beef more delicious when eating, after washing it clean, rub the piece of meat with a roasted ginger root, crushed.
