  • Prepare the ingredients

    After purchasing the carp head, you will clean the blood membranes, remove the gills and any leftover internal organs, then cut it in half if necessary. Rinse the carp head with diluted salt water to eliminate the fishy smell. After that, rinse again with clean water and let it drain.

    Sour bamboo shoots should be washed clean, blanched in boiling water for 2 – 3 minutes to reduce the sourness and eliminate toxins, then drain.

    You wash the tomatoes clean and cut them into wedges. The green onions and dill should have their roots cut off, washed clean, and then chopped or cut into pieces according to your preference. The chili peppers should be cut in half or sliced diagonally. The shallots should be thinly sliced.

  • Sauté the ingredients

    You place a pot on the stove, heat the pot with 1 – 2 tablespoons of cooking oil, then add the carp head and sear both sides until firm. Next, you push the fish to one side of the pot, add the shallots to sauté until fragrant, then add the tomatoes to sauté until soft, seasoning with 1/2 teaspoon of salt to enhance the tomato color.

    Add the sour bamboo shoots and stir evenly for about 3 – 4 minutes to absorb the flavors.

  • Cook the soup

    When the ingredients become fragrant, add about 1.2 liters of water to the pot and bring to a boil. Cook for about 10 minutes until the fish is tender. Then, season with: 1 tablespoon of fish sauce, 1 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate (remember to adjust seasoning to suit your family’s taste).

    You can add a little pepper if you like the fragrant and slightly spicy taste of ground pepper. Once cooked, add chopped green onions and dill, and a few slices of chili, then turn off the heat and ladle the soup into a bowl.
