How to choose fresh and delicious ingredients
How to choose clean, delicious broccoli (cauliflower)
- To choose clean, delicious broccoli, first, you should select heads that are of moderate size and feel heavy in hand. The broccoli should be round and tightly packed.
- Next, observe the color of the broccoli; the white broccoli should be bright white, while the green broccoli should be dark green. The broccoli should be uniformly colored, without any spots or yellowing.
- Conversely, avoid buying broccoli that is yellowing or bruised, as this indicates it has been stored for too long and will be less crunchy and sweet when eaten.
How to choose fresh and delicious beef
- When choosing beef, first you should prioritize pieces that have a bright red color and a dry surface.
- Gently press the meat with your hand; it should have a certain elasticity, not sticky, and when sniffed, it should have the characteristic aroma of beef, not a foul or fishy smell.
- Avoid choosing pieces of beef that are pale green, dull in color, or have a slimy surface as these are signs that the beef has been stored for too long or has gone bad.
Tips for choosing fresh and delicious shrimp
- To choose fresh shrimp, first you should select shrimp that have a translucent shell, allowing you to see the shrimp meat inside. The head of the shrimp should be bright and tightly attached to the body.
- Next, prioritize shrimp that are still lively and have bright eyes. When gently pressed, the shrimp meat should be firm and elastic.
- Avoid choosing shrimp with a cloudy white shell or with a detached head not tightly attached to the body, as these shrimp are no longer fresh, with less firmness and sweetness.
How to prepare Stir-fried Broccoli with Beef and Shrimp
-
Prepare and Marinate the Beef
For the beef, first you use a clean cloth to dab water and then lightly wipe the surface of the meat. Next, use a knife to cut the beef into thin slices that are easy to eat and place them in a bowl, avoiding cutting too thick as it will be tough.
Next, marinate the beef with a mixture of seasonings including: 1 teaspoon of seasoning powder, 1/2 teaspoon of ground pepper, 1 teaspoon of sugar, and 1 tablespoon of cornstarch.
Tip:- To cut the beef more attractively, you should place it in the freezer for about 30 – 45 minutes so that the beef becomes slightly firm, making it easier to cut thinly.
- Marinating the beef with cornstarch helps the beef to be tender when stir-fried, rather than tough.
Use chopsticks to mix well and marinate for about 20 – 30 minutes for the beef to absorb the seasoning evenly.
-
Boil the broccoli
Rinse the broccoli directly under running water to remove dirt from the crevices. After washing, let it drain a bit, then cut it into bite-sized pieces.
Put 1 liter of cold water into a pot, place the pot on the stove, and bring it to a boil over high heat. Once boiling, add the cut broccoli and shrimp to blanch for about 3 minutes.
After 3 minutes, pour the blanched broccoli and shrimp into a colander and rinse under cold running water, then let it drain.
Tip: Blanching the broccoli and then rinsing it with cold water will help retain its color and crunchiness. -
Stir-fried broccoli with beef and shrimp
Peel the garlic and chop it finely. Similarly, peel the ginger, wash it thoroughly, and chop it finely to get a bowl.
Place a pan on the stove, turn on the high heat, and add 1/2 tablespoon of cooking oil to the pan. When the oil is hot, add 1/2 of the chopped ginger and garlic to sauté until fragrant.
Next, add the marinated beef and stir-fry quickly on high heat for about 2 minutes. Once the beef is cooked, transfer it to a bowl.
Continue by adding 1 tablespoon of cooking oil to the pan and adding the remaining chopped ginger and garlic to sauté until fragrant. Then add the blanched broccoli and shrimp, and season with 1 tablespoon of oyster sauce, 1 tablespoon of chili sauce, and 1 teaspoon of seasoning powder.
Stir well for about 3 – 5 minutes, then add the cooked beef back in and stir for another minute, adjusting the seasoning to taste. Finally, sprinkle 1/2 teaspoon of ground pepper on top and turn off the heat.
Tip: For this dish, you must stir-fry quickly over high heat to preserve the tenderness of the beef, the crispness and sweetness of the broccoli, and to prevent the broccoli from darkening. -
