- Broccoli (cauliflower) is the most crunchy and sweet during the fall – winter season (from late July to late October).
- When buying broccoli, choose heads that are dark green, evenly round, with tightly packed florets and fresh, green stalks.
- Avoid choosing broccoli heads that are yellowing, with wilted or rotten stalks, as these have been stored for too long and are less crunchy and sweet.
How to choose fresh and delicious oyster mushrooms
- Oyster mushrooms come in two types: white oyster mushrooms and brown oyster mushrooms. For stir-fried dishes, you should choose brown oyster mushrooms so that they remain chewy and crunchy after cooking!
- To select fresh and delicious oyster mushrooms, you should choose mushrooms with a round and firm stem, a large, hard cap, and a distinctive aroma of mushrooms.
- You should not choose mushrooms that are too large, with torn caps, as these are old mushrooms and will be less sweet when eaten. Additionally, if the mushrooms are soggy or soft, you should also avoid selecting them.

Prepare the oyster mushrooms
Use a knife to cut off the stem, then tear the oyster mushrooms into bite-sized pieces. Soak the mushrooms in diluted salt water for about 10 minutes to clean them.
Rinse the mushrooms about 2 – 3 times, then place them in a basket to drain. While rinsing, you should squeeze the mushrooms to remove the salt water that has absorbed into them to prevent them from becoming salty.

Prepare broccoli and cilantro
Cut off the stem of the broccoli, then chop the florets into bite-sized pieces. Soak the broccoli in diluted salt water for about 10 minutes and rinse thoroughly with clean water 2 – 3 times, then drain in a colander.
Trim the roots and wilted or yellow leaves from the cilantro, rinse it with water to clean, then let it drain.

Stir-fry the mixture
Place a pan on the stove, add 3 tablespoons of cooking oil and turn the heat to medium. Wait until the oil is hot, then add the oyster mushrooms and stir well for about 5 – 7 minutes.
Next, add the broccoli and stir-fry it together with the mushrooms. Season the mixture with: 3 teaspoons of sugar, 2 teaspoons of monosodium glutamate, 2 teaspoons of vegetarian seasoning, 1/2 teaspoon of salt, and a little ground pepper.
Use chopsticks to stir gently so that the broccoli cooks and absorbs the spices evenly, add a little water, and continue to stir-fry for another 5 minutes. Taste and adjust the seasoning as needed, then turn off the heat.
