How to prepare Dried Snakehead Fish and Shrimp Salad

Prepare the vegetable shoots
Only keep the shoots and young leaves, then wash them thoroughly with plenty of water.
Boil the vegetables for about 4 minutes and then quickly soak them in ice water.
Tip: To keep the vegetables a beautiful green color and avoid bruising, add a little salt to the boiling water and keep the heat on high. Especially do not cover the pot. -
Prepare the shrimp
After washing the shrimp, steam or boil them until cooked. Wait for the shrimp to cool, then peel and cut them in half lengthwise.

Prepare dried snakehead fish
Take the dried snakehead fish and fry it in a deep pan with plenty of oil. If you want to reduce the oiliness, you can choose to fry it using an air fryer. After the fish cools down, use a pestle to crush it gently until soft, then tear it into small pieces.

Prepare mango
The mango used for the salad is unripe. After peeling, use a knife to finely chop the surface of the mango, then slice it thinly lengthwise to create strands. You can also use a specialized grater to speed up the process.

Make fish sauce
Use the small bowl of a multifunctional blender to finely chop garlic and chili. Transfer everything to a bowl, then add sugar, monosodium glutamate, lime juice, and fish sauce, and mix well. Taste to see if it meets your desired flavor.

Frying shrimp chips
Wait for the oil to be really hot, then add the shrimp chips to fry. When frying, remember to turn them quickly to make the chips puff up. You can also use an air fryer to fry the shrimp chips.

Mixing the salad
Add all ingredients including the edible shoots, shrimp, dried snakehead fish, mango, roasted peanuts, Vietnamese coriander, pre-mixed fish sauce with garlic and chili, and lime juice, then mix well. Adjust the seasoning to taste.

Enjoying
Arrange the salad on a plate, cut a few slices of chili to add color to the dish. Serve the salad with shrimp chips or you can also substitute with rice crackers.
