- Good brisket has a bright red color, fine meat fibers, light yellow fat, when pressed feels firm and elastic, and has the characteristic smell of beef.

How to make Boiled Beef with Green Pepper

Prepare the beef
Wash 600g of beef with cold water, then rinse with salt water. Put the beef along with 30ml of vinegar and 1 crushed ginger root into a bowl and soak the beef for 10 minutes to remove the smell.
Then, wash the beef again with water, let it drain, and use a knife to cut it into bite-sized cubes, each piece about 2 fingers long.

Prepare the auxiliary ingredients
Finely chop 10g of garlic and 10g of shallots.
Next, separate 5 green peppercorns into individual grains. Put the separated peppercorns into a plastic bag or a mortar and crush them.
For the potatoes, after peeling, wash them clean and cut into bite-sized pieces. Then, soak them in cold water to prevent browning.
Peel the onion and wash it clean. Divide the onion into 2 parts, one part diced, and the other part cut into wedges.
After peeling the carrot, wash it clean, shape it into flowers, and cut into slices about 0.5 cm thick. Wash the dried basil leaves with water to remove dirt. Next, finely chop the coriander.

Marinate the beef
You place the cut beef into a large bowl.
Add to the bowl 1 tablespoon of sugar, 1 tablespoon of seasoning powder, 1/2 tablespoon of monosodium glutamate, 1/2 teaspoon of salt, 1/2 teaspoon of pepper, 20g of roasted flour, 10g of ketchup, 10ml of soy sauce, 10ml of cooking oil, a portion of minced shallots, garlic, and the chopped cilantro stems.
You marinate the beef for 60 minutes to let it absorb the spices evenly.

Sauté the beef
You place a pot on the stove, wait for the pot to heat up, add a little cooking oil, then add the diced onion along with the remaining minced garlic and shallots into the pot and sauté until golden and fragrant.
Next, add the crushed green pepper along with 10g of ketchup and 10g of dried basil into the pot and stir well.
You add the beef to the pot and sauté until the meat is firm and absorbs the spices.

Stew the beef brisket
After the beef brisket has firmed up, add 1.5 liters of fresh coconut water to the pot, and stew the beef brisket for about 1 hour to 1 hour and 30 minutes depending on the tenderness of the beef brisket.

Fry the potatoes
Place a pan on the stove, wait for the pan to heat up, then add about 20ml of oil to the pan, add the potatoes and fry until they are firm and golden brown.

Add carrots, potatoes, and green pepper to stew
Next, add the cut carrots to the pot and continue cooking for 10 minutes until the carrots are soft. Add the fried potatoes and the remaining 5 sprigs of pepper to the pot.
Then add 1/2 teaspoon of monosodium glutamate, 1/2 teaspoon of salt, and 1 teaspoon of sugar to the pot. Take a bowl and add 20 grams of tapioca starch, then add 2 tablespoons of cold water. Dilute this mixture and slowly pour it into the pot of stewing beef, stirring constantly to thicken the beef broth.
After waiting another 10 minutes for the carrots and potatoes to be tender, add the sliced onion to the pot and turn off the heat.
