Prepare the ingredients
The corned beef you bought should be rubbed with salt all over, then use a knife to remove all the slimy membranes attached to the beef and rinse thoroughly with water several times. After that, cut the corned beef into bite-sized pieces.

Then use your hands to massage the meat thoroughly and cover it tightly, marinating for 30 minutes to allow the beef to absorb the flavors.

Add the remaining 1/2 tablespoon of annatto oil into the pot, heat over medium flame, then add lemongrass, cinnamon, star anise, whole pepper, shallots, and crushed ginger to sauté until fragrant.
Next, add finely chopped tomatoes and stir-fry together; when the tomatoes have softened, add the beef brisket and stir-fry on high heat for about 10 minutes. Pour 2.5 liters of filtered water into the pot while stir-frying, cover, and simmer the beef brisket over medium heat for 1 hour.
