  • You should choose beef tail with bright yellow fat and slightly yellowish skin.
  • Avoid choosing beef tail that has a bad smell or soft, mushy meat, as this indicates spoiled, low-quality beef tail.

How to choose fresh, undamaged tomatoes

  • Fresh, good tomatoes will have a light, pleasant natural scent, and the skin will be evenly bright red.
  • You should choose tomatoes that still have fresh green stems attached.
  • Avoid buying tomatoes with yellow seeds or wilted, detached stems, as these are not fresh tomatoes.

  • You should choose carrots that are elongated, with bright orange, smooth skin.
  • Fresh carrots will have a small core, and when held, they feel firm.
  • Avoid choosing carrots that are too large or too small, have scratched skin, or large cores, as these are fibrous carrots that are less sweet.

How to prepare Braised Oxtail with Red Wine

  • Prepare the ingredients

    The oxtail you bought should be cut into bite-sized pieces, then soaked in diluted saltwater for about 15 minutes. After soaking, remove the oxtail and rinse it with water.

    Next, cut the carrot into small pieces. For the tomatoes, use a knife to cut them into dice.

    Then, chop 1 onion and finely mince 5 cloves of garlic. Finally, cut the beef into bite-sized cubes.

    First, place a pot on the stove, add a little cooking oil to the pot, then add chopped onion and minced garlic, and sauté until fragrant.

    Then, add 1 tablespoon of rosemary leaves, chopped carrots, and 50 grams of diced beef to the pot, and continue to stir-fry for about 5 – 7 minutes.

    After sautéing the beef tail with the ingredients, add 1 liter of water to the beef tail pot.

    Next, add 240ml of red wine to the beef tail pot, stir the mixture well, and start braising.

    Braise the beef tail for 4 hours on low heat. During the braising process, you can add water if you see that the braising liquid is running low.
