Ingredients for Squid Bánh canh For 4 servings

All-purpose flour 235 gr Rice flour 57 gr Tapioca flour 56 gr Coating flour 56 gr Squid 908 gr Pork 908 gr (lean shoulder) Dried shrimp 100 gr Filtered water 7 liters Dried seaweed 80 gr White radish 360 gr Onion 1 bulb Scallions 3 stalks Cilantro a little Fried onion 2 teaspoons Fish sauce 1 tablespoon Common seasoning a little (salt/ pepper/ rock sugar)

How to choose fresh ingredients

How to choose quality pork

  • Good pork will have a light pink or light red color. The fat will have a slightly translucent white color. Avoid buying meat that is pale or too dark.
  • When choosing meat, you can smell it. Good meat will have the characteristic aroma of meat, without any unpleasant odors or strong fishy smells.
  • You can press the meat with your hand to check its elasticity. Good pork is firm, not too hard, not mushy, and does not have any slime oozing out. After pressing, if you remove your hand and the surface of the meat does not leave a dent, it is fresh meat.
  • The meat should have distinct muscle and fat structures, but they should stick closely together. When you touch it, it should feel difficult to separate.

How to choose fresh squid

  • Fresh squid should have a shiny color. The brown part should be dark brown, while the body of the squid should be cloudy white like milk. The eyes should be clear and not bulging out.
  • When you press your hand on the body of the squid, it should quickly return to its original state and not leave a dent. The head and tentacles should stick tightly together and feel firm. That is fresh squid.

    Buy pork and leave it whole, briefly blanch it in boiling water, then rinse to remove the odor.

    After buying squid, you need to wash it thoroughly with diluted salt water, then cut it into bite-sized pieces.

    For dried seaweed, soak it in cold water for 20 minutes to soften and expand it. Then cut it into small pieces.

    Dried shrimp should be washed clean with water.

    Peel the white radish, wash it well, and then cut it into bite-sized rounds. For the onion, also peel it clean, wash it, and make several cuts.

    For green onions, cut the leaves into small pieces and separate them, while cutting the roots into longer sections. Cilantro should be chopped finely.

  • Making the broth

    Place a pot on the stove, add 3 liters of filtered water. Cook on high heat until the water boils, then add the pork, white radish, onion, and dried shrimp.

    After adding all the ingredients, add 1 tablespoon of salt and 2/3 tablespoon of rock sugar to the pot, and simmer on low heat.

    Cook until the pork is tender, then remove the meat, radish, onion, and dried shrimp from the pot. You can cut the meat into small pieces to eat with the bánh canh, or you can store it in the refrigerator.

    Since the water has evaporated during cooking, you need to add more water. Add another 2 liters of filtered water to the broth you have cooked, then add 2/3 tablespoon of salt, and stir the broth well. Cook on low heat until the broth is just boiling, then turn off the heat.

    Tip: While cooking the broth, you must frequently skim off the foam to keep the broth clear. You can also add a few green onion stalks to enhance the broth’s aroma.

  • Mixing and kneading the dough

    Put 235g of all-purpose flour, 57g of rice flour, and 56g of tapioca flour into a bowl. Add 2/3 teaspoon of salt to the flour mixture so that the noodle does not become bland, mix the ingredients well and create a hole in the center to pour in water.

    Pour 280ml of boiling water into the hole in the center of the flour, mix the ingredients well. Then knead the dough for 7 minutes. After kneading, let the dough rest for 30 minutes to allow it to rise.

    Note: The water poured in must be boiling. When pouring water, do not drizzle it gradually around the flour. Because if it is drizzled around, there will not be enough heat to make the dough elastic. This will make it very difficult to roll out the dough, and the cut noodles will not look nice.

  • Making the noodles

    After the dough has risen, roll it out with some dusting flour. Proceed to roll the dough with a rolling pin; if you don’t have one, you can use a glass bottle. Roll the dough so that it is not too thick or too thin.

    Cut the dough in half and continue to sprinkle some dusting flour. Then continue to cut the dough into three parts. Sprinkle an additional layer of dusting flour to prevent the dough from sticking together when cutting.

    Finally, cut the dough into small noodles suitable for eating, and mix well with a layer of dusting flour so that the noodles do not stick to each other.

  • Blanching the noodles

    Place a pot on the stove, then add 1 liter of filtered water, and cook over high heat until the water boils.

    Once the water is boiling, slowly add the noodles. After 5 – 10 minutes, the noodles will be cooked; use chopsticks to stir them. Then turn off the heat.

    Pour the noodles into a colander and rinse well with water.

    Place the prepared broth on the stove, cook on high heat until boiling, then gradually add the noodle strands.

    Then, successively add squid, green onion roots, and seaweed. Cook until the squid is just cooked, then turn off the heat.

    After cooking, transfer the noodle soup to a bowl, sprinkle with chopped green onion, cilantro, a little pepper, and fried onions. Prepare an additional bowl of fish sauce for dipping.

    The noodle strands are soft and chewy, the squid is just cooked and not rubbery, and the broth is sweet from the meat and white radish. All together, it creates a bowl of squid noodle soup that is both rich and delicious, sure to impress your whole family.
