Ingredients for Caramel Baked Apples Serves 2
Red apples 4 pieces Brown sugar 70 gr Walnuts 40 gr Nutmeg 5 gr Cinnamon powder 1/2 teaspoon Peanut butter 4 teaspoons Vanilla extract 1 teaspoon Water 300 ml

Tips for selecting good apples:
- Choose apples that have bright colors, shiny skins, and a smooth texture when touched. For baking, you should choose dark-colored apples that have small white specks on the skin, indicating the natural sweetness of the apple.
- Only select apples of moderate size, slightly larger than a tennis ball.
- The apple stem should be fresh and green, firmly attached to the fruit.
- The apple should feel firm and heavy in hand. Gently tap the apple with your fingers; if it produces a loud sound, it means the apple is crisp and delicious.
Note:
- You can substitute walnuts with pistachios or almonds.
- Brown sugar can be replaced with white sugar; however, brown sugar will have a more aromatic quality and a milder sweetness compared to white sugar.
How to make Caramel Baked Apples

Prepare the ingredients
Put about 65 – 70g of brown sugar into a bowl, use a grater to grate about 5g of nutmeg, and add 1/2 teaspoon of cinnamon powder. Use a spoon to mix them together well.
Chop the walnuts into small pieces or you can put them in a blender to grind. Then add 1/2 of the chopped walnuts to the mixed ingredients and mix well.
For the apples, use a small spoon to create a small hole at the stem end. Then, use that small spoon to gently scoop out the apple flesh. Do this carefully to maintain the shape of the apple.
After that, place the apples on a baking tray.
Note: when scooping out the apple flesh, make sure the bottom part is not hollow like the stem end. You should scrape the apple flesh similarly to how you would scrape the flesh of a coconut.

Stuff the filling
Preheat the oven to 350 degrees Celsius before baking.
Scoop the sugar and walnut mixture into the apples until full. Then pour about 5ml of vanilla extract over each apple to enhance the aroma. Add a thin layer of butter on top and pour about 300ml of water into the baking tray.
Tip: adding water to the tray will help prevent the apples from burning on the bottom while baking, and the apples will remain moist and tender.

Bake the Apples
Place the tray of apples in the oven and set the temperature to about 370 – 375 degrees Celsius for 30 minutes. After about 30 minutes, pause the oven and scoop the liquid from the tray to drizzle inside the apples to make them juicier and softer quicker, then check if the apples are soft enough before placing them back in the oven. The baking process will take about 50 – 60 minutes for the apples to become soft.
Tip: To speed things up, you can melt sugar and sauté the apple meat with the melted sugar before putting it inside the apples to bake.

Final Product
Baked caramel apples with a light aroma of brown sugar and butter. The inside of the apples is crunchy and chewy with walnuts that provide a delightful texture. You can add a scoop of ice cream on top of the apples to balance out the sweetness, which is also very delicious.
Tips for storing caramelized baked apples:
- Wait for the apples to cool, then pour out the liquid and place the apples in the refrigerator, storing them for up to 2 days.
- When you want to use them, simply put the apples in the microwave for about 10 – 15 minutes to heat them up. When reheating, you should add a little water to the container or you can add apple juice to prevent the apples from drying out.
