How to make Mango Flan

Cooking caramel
Prepare a pot on the stove with 4 tablespoons of sugar and 4 tablespoons of water, cooking over medium heat for 5 – 7 minutes.
Once the sugar boils, reduce the heat to low for 5 minutes until it turns a brown color, then turn off the heat and pour into a mold (glass cup) to cool.
Tip:
- Avoid burning the caramel and not being able to observe it, so use a pot with a light color, not too dark.
- If you want the caramel to have a beautiful color when cooking, do not stir at all, just hold the pot handle to gently swirl it. Once the sugar has completely melted, add 1/4 teaspoon of lemon juice.

Blend the mango
Peel the mango and cut the flesh into a bowl. Then, use a spoon to gently mash and press the mango flesh until it becomes smooth, then strain it to extract the juice.

Mix the mango flan mixture
Prepare a bowl for the mango juice, 3 eggs, 250ml of unsweetened milk, 190ml of condensed milk (1/2 can), and 2 tablespoons of cornstarch, then mix all the ingredients together.
Tip: To ensure the mixture is well combined, you can use a hand mixer.

Pouring the mold and baking flan
After thoroughly mixing the mixture, pour it into the mold (glass cup) and bake in the oven for 40 minutes at a temperature of 160 degrees Celsius.
After that, when the cake is cooked, take it out and let it cool for 30 – 60 minutes, then put it in the refrigerator for 1 – 2 hours.
Tip:
- If you don’t have an oven, you can replace it with a rice cooker to steam the cake, but the steaming time will be longer.

- When taking the cake out, to avoid burns, you should use specialized oven gloves.
