How to Choose Fresh and Delicious Carrots
- You should choose medium-sized carrots that are straight and tapering towards the tail, with smooth skin, firm to the touch, and slightly hard.
- Select carrots that are bright, deep orange in color, with fresh green tops firmly attached to the body of the carrot.
- Do not choose carrots with wilted tops, bruised bodies, slimy areas, or spots of decay, and if pressed, they feel soft.
- Avoid overly large carrots. Carrots with thick stems and shoulders are older, containing more fibers and fewer nutrients.

Prepare the Carrots
Peel the carrots, then cut them in half, and use a grater to shred the carrots.

Marinate Carrots with Sugar
After shredding the carrots, place them in a large bowl and add sugar, mixing well. Next, cover the bowl tightly with plastic wrap and let it sit for 2 hours until the sugar-carrot mixture releases water as shown in the picture, then use a sieve to filter the carrots from the sugar water.
Note: If you are making a large amount of carrots, around 1 kg or more, it is advisable to marinate for about 10 hours or overnight for better flavor. -
Cook the Jam
Pour the sugar water into a pan and place it on the stove and heat until the sugar water thickens, then add the carrots and stir-fry. Turn the heat to low, continuously stir the carrots until the sugar coats them and turns white, then add a few drops of vanilla and turn off the heat. Continue stirring to allow the residual heat from the stove to help the carrot jam dry further.

How to Store Carrot Jam
