- Choose chicken breast pieces that feel elastic when pressed, moist, not dry, and whole without being broken or leaking.

- To choose delicious cabbage, you should select those that are round and have a slightly dark green color.

Prepare the ingredients
Buy chicken breast, wash it with clean water 2 – 3 times, using your hands to gently rub to remove all dirt and slime. Then chop the chicken breast finely.
Shred the cabbage into thin strips and then cut across into pieces about 1 finger length long. After that, soak the cabbage in water for 10 minutes, then rinse it clean with water.
Next, add 1/2 tablespoon of salt to the bowl of cabbage and stir well with a spoon to soften the cabbage. After that, drain all the water from the bowl of cabbage and rinse again with water to remove the saltiness. Finally, squeeze the cabbage tightly to remove any remaining water.
Peel 1/3 of an onion and chop it finely.
Trim the roots of the scallions, wash the tops, and then chop them finely.

Mix the ingredients
Add the finely chopped chicken breast into a bowl with 100g of tofu, onion, and scallions. Then add 1 tablespoon of soy sauce, 1/2 teaspoon of ground ginger, 1/2 teaspoon of garlic powder, 1 tablespoon of tapioca flour, 1 tablespoon of cooking oil, and a little pepper.
Next, use your hands to mash the tofu and mix everything thoroughly so that the chicken, tofu, and spices blend well together.

Shaping
Add 1 tablespoon of tapioca starch to the prepared cabbage and mix well.
Take half a handful of cabbage and spread it thin on your hand. Then, scoop 1/2 tablespoon of the tofu and chicken mixture and place it on top. Next, take another portion of cabbage to cover it, then roll into a round ball and shape it evenly.
Do the same for each cabbage ball until all the tofu and chicken filling is used up.

Place all the cabbage balls on a tray or plate and steam them over medium heat for about 13 minutes.
