How to Make Cheese Flan Cake Using an Air Fryer

  • Cooking Caramel

    Place a pot on the stove, add 50g of sugar, then pour in enough water to just cover the sugar.

    Turn on the stove and cook the mixture over medium heat until the sugar completely dissolves. When the sugar starts boiling and turns golden, add 30ml of lemon juice to the pot, then shake the pot until the mixture turns a brown color, then turn off the heat.

    Pour the caramel mixture into the cake mold and shake evenly so that the caramel coats the bottom of the mold.

    Tip:

    • You don’t need to add too much water, just enough to dissolve all the sugar is sufficient.
    • It’s best to add lemon juice at the final stage to avoid making the mixture bitter.
    • Once the caramel is cooked, quickly pour a thin layer into each cake mold. Avoid letting it sit too long as caramel hardens quickly when cooled.

  • Warm the milk

    Place a pot on the stove, add 500g of fresh milk, 50g of sugar, and 30g of cheese powder. Turn on the stove on low heat and use a whisk to stir until the cheese powder is completely dissolved and the milk mixture is warm, then turn off the stove.

    Tip: You should only heat until the sugar and cheese powder are completely dissolved, and the mixture is warm but not boiling, because if the milk boils, it will easily separate, and the final product will not taste good anymore.

  • Whisk the egg and milk mixture

    For the chicken eggs, take 3 eggs and crack them into a bowl, for the remaining 2 eggs, separate the yolks and add them to the bowl.

  • Pouring into molds and baking

    Preheat the air fryer for 15 minutes at 110 degrees Celsius.

    Slowly pour the egg and milk mixture into each mold, then place them in the air fryer to bake for 25 – 35 minutes at 110 degrees Celsius.

    Finally, refrigerate the flan for at least 4 hours before serving.

    Tips to prevent the flan from being porous

    • When whisking the egg and milk mixture, you should stir in a specific direction, avoiding vigorous whisking to prevent air bubbles.
    • To achieve a smooth texture, you can strain the mixture before steaming.

    • Avoid baking at too high a temperature, as this will cause the egg and milk mixture to bubble and become porous.

  • Warm the milk

    First, add 220ml of unsweetened fresh milk and a piece of cheese into a pot, then stir over low heat until the milk is warm (do not boil) and the cheese has completely melted.

How to choose fresh and delicious chicken eggs
