How to make Cherry Blossom Cookies

Mixing the dough
Before mixing the dough, soak the salted cherry blossoms in water for 30 minutes to soften the flowers. Then, remove the cherry blossoms and place them on paper towels to absorb excess water.
Use a hand mixer to beat 90g of unsalted butter at room temperature, then sift in 50g of powdered sugar and mix until the butter and sugar are well combined.
Once the butter and sugar have melted, add 1 egg yolk and 1/2 teaspoon of vanilla extract, then continue to use the hand mixer to mix everything together.
After mixing, divide 125g of flour into 2 parts and sift the flour into the mixed ingredients, then use the hand mixer to mix well.
Finally, use a spatula to mix once more to ensure the dough is more uniform.

Shape the dough
When the dough is uniform, place it on parchment paper, use your hands to flatten it, then put it in the refrigerator for 15 minutes.
After 15 minutes, take the dough out and use a rolling pin to roll it out to about 5mm thickness.
Once rolled out, use a flower-shaped cutter to cut into the dough to create shapes.
Next, put the dough back in the refrigerator for another 15 minutes.

After 15 minutes, take the dough out and separate each piece that has been shaped into flowers, placing them on a baking tray lined with parchment paper, and place a salted cherry blossom on each piece of dough.
Next, bake the cookies at a temperature of 170 degrees Celsius for 18 – 20 minutes.
Tip: To maintain a stable temperature in the oven, remember to preheat the oven 15 – 30 minutes before baking the cookies.Once the cookies are done, take them out to cool and enjoy!
