Ingredients for Salted Egg Cookies without an Oven For 25 cookies

All-purpose flour 190 gr Baking powder 1/4 teaspoon (leavening agent) Salted eggs 5 eggs Unsalted butter 100 gr Cream cheese 20 gr Coconut powder 20 gr (or milk powder) Powdered sugar 60 gr Egg yolk 1 egg Unsweetened fresh milk 5 ml Salt 1 bowl (rice bowl)

What is type 8 flour?

  • Type 8 flour, also known as cake flour, is made from finely milled soft wheat, has a high starch content, and very low protein content, only about 7 – 8.5%. To the naked eye, the flour always appears fine and has tiny particles.
  • Type 8 flour is commonly used to make light, fluffy cakes such as Chiffon, Sponge Cake, Roll Cake, Cupcake, Mousse, or various types of sponge cakes from Taiwan, Japan, etc.

  • If you cannot buy flour number 8, you can also use flour number 11, also known as all-purpose flour.
  • For unsalted butter, you should choose animal butter to make the cake taste better. In case you cannot find animal butter, you can also use vegetable butter from Tuong An. However, the cake will be a bit less fragrant.

  • Prepare the salted egg yolks

    First, peel the outer shell of the salted egg, then separate the yolk from the inside.

    Next, steam the salted egg yolk for another 15 minutes to remove the fishy smell. Then, use a spoon to mash the yolk until smooth.

    Tip: For raw salted eggs, peel the shell, take the yolk, rinse with alcohol, then steam or bake until cooked, and then mash the salted egg yolk smoothly!

  • Mash the salted egg cheese mixture

    Mash 100g of unsalted butter until smooth, then add 20g of cream cheese and the salted egg yolk, and mix well until the mixture is smooth.

    Next, add 60g of powdered sugar and continue mixing until well combined.

  • Mix the cookie dough

    Divide 190g of flour into 2 parts, then sift each part into the butter mixture and mix well.

    Next, sift in 20g of coconut flour, 1/4 teaspoon of baking powder, and continue to mix until the dough forms a smooth and pliable mass.

    After mixing, let the dough rest in the refrigerator for 15 minutes.

  • Rolling the dough and shaping the cookies

    Place the dough between 2 sheets of parchment paper, then use a rolling pin to roll the dough until it reaches a thickness of about 0.5cm.

    Next, place the dough in the refrigerator to rest for the second time for 15 minutes. After 15 minutes, use a mold to press onto the surface of the dough to shape the cookies.

    Note: You should let the dough rest for 15 minutes in the refrigerator as it will help the dough firm up for easier shaping. Additionally, it allows the ingredients time to blend together, enhancing the flavor of the cookies.

  • Baking the cookies

    Whisk 1 egg yolk with 5ml of fresh milk and then brush this mixture over the surface of the cookies.

    Place 1 cup of salt in a pan, spread the salt evenly across the surface of the pan, then cover it tightly and heat. When the salt in the pan gets hot, place the cookie tray in, cover it tightly, and bake over medium-low heat for 15 minutes.

    After 15 minutes, flip the cookies over and bake for another 5 minutes until the surface of the cookies is dry and cooked. To make the cookies crispier, you should flip and bake them an additional 2 – 3 times.

    Tip: If using an oven, set the temperature to 165 degrees Celsius and bake the cookies for 15 – 20 minutes!
