What is type 8 flour?
- Type 8 flour, also known as cake flour, is made from finely milled soft wheat, has a high starch content, and very low protein content, only about 7 – 8.5%. To the naked eye, the flour always appears fine and has tiny particles.

Prepare the salted egg yolks
First, peel the outer shell of the salted egg, then separate the yolk from the inside.
Next, steam the salted egg yolk for another 15 minutes to remove the fishy smell. Then, use a spoon to mash the yolk until smooth.
Tip: For raw salted eggs, peel the shell, take the yolk, rinse with alcohol, then steam or bake until cooked, and then mash the salted egg yolk smoothly! -
Mash the salted egg cheese mixture
Mash 100g of unsalted butter until smooth, then add 20g of cream cheese and the salted egg yolk, and mix well until the mixture is smooth.
Next, add 60g of powdered sugar and continue mixing until well combined.

Divide 190g of flour into 2 parts, then sift each part into the butter mixture and mix well.
Next, sift in 20g of coconut flour, 1/4 teaspoon of baking powder, and continue to mix until the dough forms a smooth and pliable mass.
