What is cheese powder?
- Cheese powder is a type of powdered mixture that is orange-yellow, yellow, with a creamy salty taste and a characteristic aroma.
- Cheese powder is made from cheese that has been drained of water, dried, and then ground into a fine cheese powder combined with a little seasoning (milk powder, salt, sugar,…) to create the rich salty-sweet flavor of this product.
- Cheese powder can replace regular hard cheese; it is more convenient in terms of storage and shelf life.

How to Make Cheese Rice Cake

Mixing the Dough
Add 200g of rice flour and 100g of glutinous rice flour into a bowl, then add a little salt (about 1/2 teaspoon) along with 1/2 tablespoon of sesame oil. Next, gradually add 300ml of warm water to the flour and use a whisk to mix the flour evenly.
Tip:
- Besides using store-bought flour, you can soak sticky rice and glutinous rice for 4 – 5 hours until they swell and soften, then grind the rice and add warm water to knead the dough.
- Using sesame oil to mix the dough will make the cake tastier. However, if sesame oil is not available, you can use cooking oil as a substitute.
After mixing the dough, use your hands to knead it well until you see a smooth dough mixture.

Steaming the dough
Prepare a bowl, to prevent the dough from sticking, add 1/2 tablespoon of sesame oil to the bowl and spread it evenly before adding the dough.
Then, pour the kneaded dough into the bowl.
Next, place a pot with about 700ml of water on the stove, then put the bowl of dough into steaming, cover the lid and steam the dough for 20 minutes.
After the dough is cooked, take it out and use a paper towel to absorb any remaining water on the surface of the dough.

Making the rice cake
Prepare a cutting board, then wrap the surface of the board with plastic wrap. Next, add 1/4 tablespoon of sesame oil and spread it evenly over the board.
Place the steamed dough onto the board and use a knife to cut the dough in half. Note, to prevent the dough from sticking to the knife, before cutting, spread 1/4 tablespoon of sesame oil on the knife.
Next, spread 1/4 tablespoon of sesame oil on a meat mallet and use the mallet to pound the dough until it becomes smooth.
After pounding, proceed to knead the dough, then roll the dough into long cylindrical shapes of your desired diameter, and cut them into bite-sized pieces.

Frying rice cake
Place a pan on the stove, add about 200ml of cooking oil to the pan. Wait for the oil to heat up, then add the rice cakes to fry until they puff up.
After frying, take the rice cakes out and place them on a plate lined with absorbent paper.

Shake the rice cake with cheese
Put the rice cakes in a box with 2 tablespoons of cheese powder.
Close the lid of the box and shake well until the rice cakes are evenly coated with cheese powder.
