Quail eggs 30 eggs Animal butter 3 tablespoons Garlic 1 tablespoon (minced) Cilantro 1 sprig Crispy flour 50 gr (or all-purpose flour) Chili sauce 3 tablespoons Fish sauce 1 tablespoon Sugar 1 tablespoon Cooking oil 100 ml

How to choose fresh quail eggs

  • Quail eggs must be chosen with a bright, sturdy shell; do not choose eggs with a grayish shell and especially those with spots.
  • Shine a light on the eggs: If the eggs are fresh, the inside will have a translucent pink color with the yolk in the center.

How to make Butter Fried Quail Eggs

  • Boil and peel the eggs

    Prepare a pot of water about 1 liter. Then put all the cleaned quail eggs into the pot and boil until the eggs float to the surface of the pot, then turn off the heat.

    Remove the quail eggs and place them in a bowl of cold ice water, then proceed to peel the eggs, and put them into a basin.

    Tip:

    • To make the shells easy to peel and keep the eggs intact, when boiling, you should add 1 tablespoon of salt to the pot of boiling water.
    • Since quail eggs cook very quickly, do not let the flame be too high while boiling as it may crack the eggs.

  • Fried Eggs

    After peeling all the eggs. Place them in a large bowl and cover the eggs with a layer of crispy frying flour/wheat flour on the outer surface of the eggs. Then use chopsticks to mix evenly so that the flour coats well.

    If you prefer a crunchier texture, you should coat the outer layer of flour, then roll it through the egg yolk, and coat it with another layer of crispy frying flour again. This way, the outer coating will be thicker and crunchier when fried.

    Prepare a non-stick pan. Fill it with oil. When the oil is hot, add all the floured eggs. Turn them evenly to cook the eggs until golden.

    Note:

    • Stir gently so the eggs do not break to ensure the aesthetic quality when the dish is served.
    • Fry on low heat so that the eggs cook from the outside in to avoid burning the outer layer of flour.

    Place the pan on the stove over medium heat. When the pan is hot enough, add 3 tablespoons of butter and stir to melt the butter completely. Next, add the minced garlic. Then add 3 tablespoons of chili sauce and stir well to blend everything.

    Finally, add 1 tablespoon of sugar and 1 tablespoon of fish sauce to enhance the flavor of the butter sauce. After about 5 minutes, turn off the heat and let it cool.

    Once the sauce is ready, pour it over the fried eggs prepared earlier. Add some herbs to make the dish more appetizing and visually appealing.
