How to choose good chicken
- Choose medium-sized chickens for the best meat quality, as smaller chickens usually have less meat and larger ones may be water-injected.
- Opt for chickens with a distinctive golden skin color, thin skin, smooth to the touch, less bumpy, and good elasticity.
- The inner chicken meat should be pinkish, indicating freshness, and will yield satisfactory results when roasted. Avoid choosing chickens with bruises or blood clots in the meat as they are often dead before being processed and won’t taste good.
How to Prepare Chicken Cooked with Pate

Prepare Ingredients
Add 1 teaspoon of salt, 1 tablespoon of seasoning powder, 1 teaspoon of monosodium glutamate, 1 teaspoon of ground pepper, and 1 tablespoon of minced shallots into the bowl of chicken and mix with your hands to coat the meat evenly with the spices. Then set the chicken aside to marinate for 30 minutes.
Peel the carrots and potatoes, and cut them into bite-sized pieces. Add 2 tablespoons of cooking oil to a non-stick pan to briefly fry the carrots and potatoes. When the potatoes and carrots become slightly translucent, turn off the heat.
Heat 50g of unsalted butter on the stove. When the butter starts to boil, add 1 tablespoon of minced onion to sauté. Then add 250g of pate and mix well. Once the pate absorbs the butter, add an additional tablespoon of annatto oil and stir.

Cooking Chicken
Add 2 tablespoons of cooking oil to the pot. When the oil is hot, add 1 tablespoon of minced shallots and 1 tablespoon of minced garlic to sauté.
Then, add the marinated chicken to stir-fry until it is firm, then add half of the prepared pâté. Continue to stir-fry until the pâté coats the pieces of chicken evenly, then add 1 liter of coconut water to the pot and simmer for 10 minutes.
After that, add the fried potatoes and carrots along with the remaining pâté into the pot. Cook for another 5 minutes to finish.
