How to prepare Boneless chicken feet fried with salt

Boil and debone the chicken feet
After purchasing the chicken feet, wash them with diluted salt water, then boil them for 15 minutes with a few slices of ginger. When boiling, make sure to start with a high flame; when the water boils, reduce the heat.
Cut off the claws of the chicken feet, then place them in the refrigerator for 2 hours to firm them up so that the skin does not tear when deboning.
Proceed to debone the chicken feet; for the toes, use scissors to cut around the skin, and when the joint is exposed, cut off the bone, continuing this until all 4 toes are done.
Next, use a knife to make a straight cut along the back of the chicken foot, from the toes towards the ankle.
Finally, use the tip of the knife to cut around the skin and then use your hands to peel the skin back towards the toes; when reaching the joint, bend the joint to remove the bone.
Once deboning is complete, cut each chicken foot in half and place them on a plate.

Coating with flour
Add 1/4 teaspoon of salt, 1/4 teaspoon of seasoning, and 1/3 teaspoon of fish sauce to the plate containing the chicken feet, then mix well with clean hands.
Next, sprinkle 120g of flour over the chicken feet to coat them evenly with a thin layer of flour.

Frying the chicken feet
Add 2 tablespoons of cooking oil to the pan, when the oil is hot, add the chicken feet to fry one by one. Remember to flip them regularly so that the chicken feet fry evenly!
After about 3 minutes, when the chicken feet are firm, add lemongrass and shallots, stir well for about 2 minutes, then turn off the heat.
Tip: To ensure the chicken feet are evenly crispy, fry one side until cooked before flipping to fry the other side continuously.
