How to choose fresh and delicious chicken

  • If buying live chicken, choose those that move actively, have smooth feathers, red combs, shiny beaks, and straight, slender legs.
  • Do not buy chickens that are standing limp, have ruffled feathers, watery eyes and noses, bruised legs, or pale purple or black bruised combs.
  • For pre-prepared chicken, choose chicken with a characteristic yellow skin color, the skin looks fresh, thin, smooth, and elastic. The meat inside should have a natural reddish-yellow color, feel firm and elastic when pressed.
  • Do not buy pieces of meat that look dull, soft and mushy, slimy, or have an unpleasant odor.

How to prepare Tamarind Chicken

  • Prepare the ingredients

    The chicken should be rubbed with salt for about 2 minutes and then rinsed thoroughly under running water. Next, cut the chicken into bite-sized pieces.

    Tamarind should be placed in a bowl with 100ml of water, mashed, and then strained through a sieve to extract the tamarind juice. Peel and finely chop the garlic.

    • Method 1: The simplest way to remove the odor from chicken is to rub the meat thoroughly with salt and then wash it multiple times with clean water.
    • Method 2: Additionally, to eliminate the chicken odor, rub the chicken with lemon juice (or vinegar, white wine) and then rinse again, allowing it to drain.

    Place a pan on the stove, pour in 200ml of cooking oil, heat it up, and then add minced garlic to sauté until golden and fragrant. Once the garlic is golden, remove it all into a bowl, and set aside.

    Next, after sautéing the garlic, add the chicken to fry over medium heat. To ensure the chicken cooks evenly, turn it regularly while frying.

    Fry for about 10 minutes until the chicken is golden brown on the edges, then transfer it all to a plate.

  • Making Tamarind Chicken

    Next, scoop out the oil in the pan, leaving about 2 tablespoons of oil, add 2 tablespoons of fish sauce, the filtered tamarind juice, 2 tablespoons of sugar, and 1 teaspoon of seasoning powder.

    While heating and stirring evenly, wait until the mixture boils and the seasonings have dissolved, then add the fried chicken, stir well to let the chicken absorb the seasonings, and lower the heat to simmer gently.

    During the cooking time, stir occasionally, after 3 – 4 minutes, when the liquid thickens, adjust the seasoning to taste and add fried garlic, stir again, and turn off the heat.
